Made a last minute decision that I wanted pulled pork yesterday.
3 pork scotches rubbed with a mix of double garlic butter white lightening and pork,
Into the over apple pellets.
Made up a sauce, mix of apple cider vinegar, bbq sauce, mustard and a couple of other odds and ends.
Smoked, rested and pulled.
Every time I have pulled pork I’m reminded how much i enjoy it.

Wings wings and more wings!
Nibbles rubbed with a mixture of charcoal chicken and double garlic white lightning , then on my ones I dusted with orient blaze for an extra kick.
Some new toys from , Kristy Kone and mini chimney. They are solid quality!
Cooked on the Weber over a mix of coconut and mini lump, with some cherry for smoke.

Chilled, sliced with my blade.
Fried up and wacked in a burger, lucked out with a double yolker! Winner winner!

Got a fresh batch of jerky from this stuff is absolutely killer. My personal favorite is the S&V, I can’t get enough of it!

ONE HUNDRED NEW KNIVES!
Apologies for the silence…

… After 2x Meatstock events, we were out of new blades for nearly 4 weeks.

Put some Damascus and other custom orders on top of it... we had to get our heads down and work harder than ever.

So set up your timer:

Thursday 21st of May (tomorrow)

6:30pm

They will start being released. Expect new knives rocking up everyday until Sunday.

Chopped pork shoulder tacos!
Marinated pork shoulder cooked up high on the Parrilla over lump, with some pecan wood for a bit of smoke.
Once cooked I chopped it up with my chefs knife,
Basic tacos, spinach, cheese, pork, some Smokey chipotle salsa, then I alternated coconut chilli sauce and mango chilli sauce.
It was a super tasty bite!
