The little pleasures of Saturday..
A good Shiraz, Holland Kroon goats milk Gouda, Spanish Curado sheep’s milk cheese, and French Comtè.. made from pretty standard cows milk :) (from front to back)
My favourite is the Gouda! What’s yours?

The cheese board with a slide out hides-hole for the cheese knives we picked up an an op-shop recently- no more hunting for the lost little cheese knives now as everything is in it’s right place!

Slowly getting better at the art of stone baked pizza- a dough with lower moisture content just slides effortlessly off the pizza peel. You get ignoring the recipe on the back of the pizza flour box, and kneading the dough by instinct alone till it feels just, just right.
Got some tips from a professional chef- little did I know- dough balls aren’t just round balls- they have a particular structure inside!
Build dough balls like little stuffed money bags, using a rolling thumb motion, similar to how you make a rolled pie crust, to create a super tight topside surface tension. Let them rise, rest.. flatten them out to a base.. rest and rise on a wooden board. Build the pizza quickly.. with simple fresh ingredients.. and eat straight from the oven!

Landsborough Main Street back in 1908. At its peak, the town had 10,000 people resident, chasing the dream of digging up their fortune in gold. Some did! Others built pubs, stores and made boots and bread. Many of those founding families are still living here today.
