Toblerone Chocolate Chip Cookie. Today we are making chocolate chip cookies and giving them to our neighbours and security guards for Christmas Gifts. We also baked some for Santa and his reindeers for tomorrow night. We will leave it out with a glass of milk. Merry Christmas every one! Toblerone Chocolate Chip Cookie4 and 1/2 cups (560) all-purpose flour 2 teaspoon baking soda3 teaspoons cornstarch1 teaspoon salt1 1/2 cup (240g / 24Tbsp) unsalted butter, melted & cooled 5 minutes*1 1/2 cup (300g) packed light or dark brown sugar1 cup (200g) granulated sugar2 large eggs & 2 egg yolks2 teaspoons pure maple syrup2 and 1/2cups (450g) Toblerone count into chocolate chunks.

For the paste 80gr Garlic - peeled, chopped slightly140gr Shallots - peeled, chopped slightly 6 Lemongrass - 3 for paste and 3 for soup80gr Galangal - chopped in small pieces60gr Ginger - chopped in small pieces50gr Fresh Turmeric - peeled and chopped 30gr Dried Chilli - soaked in hot water30gr Dried Shrimp - soaked in hot water80gr Candlenuts - cashews as substitute 20gr Belacan - (optional) toasted in dry panFor the soup250gr Coconut Cream1500ml - Chicken Stock3 Lemongrass - smashed to release oilsSea salt - to tasteFor the garnish500gr Prawns - peeled and deveined 800gr Hokkien Noodles400gr Glass Noodles 1 Chicken Breast - poached and picked 150gr Fish Tofu - cut150gr Fried Fish sticks - cut120gr Fried Tofu - cut150gr Ming Bean SproutsFresh CorianderFried ShallotsLime (optional) For Prawn oilPrawn shells60gr Chilli OilMethodFor the soup1. Place all ingredients in blender with some oil and puree until a smooth paste2. Add cooking oil to a large pot and heat until smoking3. Add the paste carefully and stir continuously4. Add water if it starts to stick 5. Cook until pungency of raw onions and garlic take on a “sweeter” aroma6. Add coconut cream and stir through, cook for another 5 minutes while stirring7. Add the chicken stock and bashed lemongrass and simmer for 30-45 minutes8. Season with sea saltFor the prawn oil1. Place cooking oil in a pan and heat until smoking hot2. Add the prawn shells, stir through until fragrant 3. Add the chilli paste and continue to cook for a further 8-10 minutes4. Strain the prawn oil To finish1. Blanch the noodles and then add to a bowl2. Blanch the prawns in hot water with the fish cakes and fish tofu 3. Place fish cakes on top of the noodles4. Add the cooked chicken 5. Add the fried tofu 6. Pour the laksa broth on top 7. Garnish with min bean sprouts, coriander and fried shallots 8. Serve with limes

We love adobo, one of Philippines best known dishes! Daddy loves chicken adobo so today we will be cooking it with Albert and Daddy! We will also make boiled egg salad which mummy says must be eaten with adobo?!?! this is so easy to make and it you make a lot, it tastes even better the next day. You can make many versions using pork, squid and even vegetable.

Daddy says there are many different versions of this recipe depending on what area of Philippines you come from - this is his favourite version so don’t be messaging him saying the recipe is not right!!

Chicken Adobo
1kg Chicken wings
250gr Giblets (optional)
1 large Onion - finely sliced
2 heads of Garlic - finely chopped
1 cup Vinegar
3/4 cup Light Soy
4 Bay Leaves

Boiled Egg Salad
6 Eggs - boiled 6 minutes
5 Spears Spring Onion - finely sliced
Lime juice
1 tspn Fish Sauce
Sea Salt to taste
