About Me...

Loredana Antionette Iuele was born and raised in Australia, as a child to her adult life she has mostly lived in Melbourne. Went to school at Pascoe Vale Girls High and after completing Year 10 she decided she wanted to do an Apprenticeship of Hairdressing. After completing a 4 year Apprenticeship she continued on working until 17 years later she decided it was time to move on and start her own business on which she did. Lori would bake everyday for her clients, in her spare time or when she had a day off. All Lori wanted to do was to bake in her kitchen.

From making pastries to tarts to exquisite gateuxs but most of all what she loved most was making her Petit Fours. In the 7 years of her business, Lori had then decided to take that step further and enrolled herself into William Angliss where she started a Patissiere course for 18 months but at the same time she was still working as a hairdresser. As time went by Lori was not only seeing herself having a 2nd career but seeing more and more as a Pastry chef and so she did just that. She had finished up with her hairdressing and focus on what she loved most.

With no real experience Lori decided to do some hotel work which she had landed work experience at The Langham Melbourne to start from working in the small kitchens to the buffets & fine dining. She adds the experience was incredible, with working along with the best chefs in a 5 star hotel you would be amazed how much you can learn. Its hard work, long hours but you if you want to learn its all worth it at the end. As she continue doing work experience, she also needed a paid job & within weeks she had found a local restaurant/bar Orange Cafe, part time.

Months on Lori was at her point of life where she was confident enough to go out on her own, she had left The Langham hotel & Orange cafe & straight away she was working to achieve a small business for herself. Making macarons and small cakes from home & going to cafe to cafe giving samples hoping she will get work. As weeks went by Lori had nothing, not even a phone call to say Thank you but Lori never gave up. After 5 months or so Lori had landed a job in a catering company with starting her new business. She felt so surreal but excited...
