👩🏽‍🍳🧁Chickpea Blondie🧁👩🏽‍🍳

INGREDIENTS:
3 cups chickpeas (cooked, rinsed and drained)
1 cup unsweetened peanut butter
1 tbsp vanilla extract
1 tsp baking soda
2/3 cup maple syrup
pinch of salt
Topping: handful of chocolate chips

HOW TO MAKE:
Preheat oven to 180C.

Add all ingredients, except for the chocolate chips, to a blender or food processor and blend until smooth.

Add the mixture to a greased pan, then sprinkle with chocolate chips and bake in preheated oven for 40 minutes.

Let cool for 15 minutes before cutting in. Enjoy warm. Can be stored in freezer.

Congratulations, Class of 2021, on completing primary school and all the very best for high school!

Having taught Yr 6 I know how excited the students, their families, and teachers would have been today. This time it was different because I was the mum of one of those students!

For Zoe and her classmates, I made individual vanilla cupcakes with vanilla buttercream frosting. Cupcake toppers I made with fondant.
