At Woodside Honey, our honey is kept as natural as possible. It is extracted, gravity filtered, and jarred — we don’t heat treat or process our honey to slow down crystallisation (also known as “candying”).
That means over time, your honey may naturally set. This is completely normal for pure honey and is often a sign of quality and minimal processing.
This season we’ve noticed something interesting: one batch candied quite quickly, while another is only just starting to set. That’s simply due to the different floral sources the 🐝🐝🐝🐝 were working with at the time — different nectars behave differently.
If you’re curious about candied honey, Beechworth Honey has a great article explaining:
- why honey crystallises;
- how to gently return it to runny form;
and some really handy ways to use candied honey!
Bottom line: candied honey isn’t spoiled or faulty — it’s just honey doing what pure honey naturally does!

Kenton Valley, removed sticky mats today and no sign of varroa🙂.
Next step is in four weeks when I remove the Bayvarol and add sticky mats.

Woodside - quite a few gums flowering and a nice honey smell by the busy hives!
Next varroa check I will have to also check to ensure they don’t get honey bound before spring!

Update on Kenton Valley varroa.
I was due to add sticky mats and do alcohol washes on the hives Wednesday as that is the four week stage of the Bayvarol treatment.
As we are due rain and wind then I added sticky mats on Sunday and did the alcohol washed.
Happily no sign of varroa.
I also added some honey mixed with pollen and green banana powder to one hive to give them a boost as they were low on stores.
There are some gums starting to flower so hopefully they will cope moving forward.

I went to Kenton valley yesterday as there were patches of sun and about 17C. Replaced the hive base of the one that had chalkbrood and gave the bees a mixture of bee-complete green banana powder and honey. I also put two overripe bananas in the hive. Hopefully this gives them a pick me up and encourages a cleaning frenzy.

After three days I removed the sticky mats. One hive has some chalkbrood as well as varroa 😥. Varroa numbers were not high so I must have detected them before they built up.

24 hours after sticky mats and Bayvarol going into the hive. Bees are busy on a nice sunny day.

Very sad day today. PIRSA found more mites on the bees I alcohol washed and there were enough that I had to treat them.
Today I put sticky mats under each brood box and added four Bayvarol strips to each brood box.
I take the sticky mats out on Saturday and the strips come out in six to eight weeks.
Unfortunately to keep the hives going I had to do this, no other viable option.
My main aim during the invasive build up stage is to keep the hives alive.

Varroa 😥Kenton Valley, found mites, damn!Only one in each wash, but there will be more.
