As part of the new page launch sharing my full proof step by step Kacchi recipes. Try it, it will always give you best result.

This is the best Kacchi Biryani I have cooked, when I went live on Instagram to show the whole cooking process. It was a lot of fun.

Ingredients:

Meat:
2kg Chopped Leg of Lamb/Goat

Biryani Masala:
20 pc Cloves
20 pc Cardamom
1 inch Cinnamon stick
1 tsp Chilli Powder
1 tsp Cumin Powder
2/3 tsp Mace
1/4 tsp grated Nutmeg

Marinade:
250g smoked yogurt
3 tbsp Ginger Paste
3 tbsp Garlic paste
1/2 cup of fried onions
1g of saffron
2 tbsp salt
Biryani masala from above

Potatoes:
16 - 20 medium size potatoes
1 tsp salt
1 tsp sugar
1/4 tsp Saffron colour

Half cooked rice:
1.25kg Basmati Rice
6/7 litres of water
20 pc Cloves
20 pc Cardamom
2 bay leaves
4/5 tbsp salt (depends on salt)

Layering:
1 cup salty water from rice
1 cup milk
10 Alubokhara/Prune
1/2 cup fired onions
2 tsp rosewater
1/4 tsp Saffron colour

Dough to seal the pot.

Cooking:

Once sealed put the pot on stove in very high heat for 10 min.

After that I cooked in the oven for 2 hour 30 min at 180 degrees.

I haven’t done it on stove but a lot of people have tried it on stove, on top of a Tawa for 1 hour 30 min in medium heat.

Please use bit more water and milk so that it doesn’t turn out dry.

A different way to cook one of Bengal’s most treasured fish. āχāϞāĻŋāĻļ is marinated with roughly crushed aromatics, plenty of green chilli, spices and a slightly unconventional combination of ketchup and chilli sauce, then pressure cooked and finished low and slow.

The long cooking process almost melts the notoriously fine hilsa bones while allowing the rich, oily fish to release its flavour into the sauce.
