The food you throw away vs. the food you never even see. 🌍🍽️

​We talk a lot about "food waste" in the culinary world, but if we want to fix our broken food system, we have to understand the difference between Loss and Waste.

​Here is the science behind the leak:

​🚜 FOOD LOSS (The Upstream Problem)

This happens before the food ever reaches the grocery store. It’s systemic. It’s the tomatoes crushed in a truck on a bad road, or the grain rotting in a silo due to poor infrastructure. It is a failure of the system.

​🛒 FOOD WASTE (The Downstream Problem)

This happens in our supermarkets and our kitchens. It’s behavioral. It’s the leftovers we scrape into the bin, the bag of spinach we let turn into liquid in the fridge, or the "ugly" apples supermarkets refuse to sell. It is a failure of habit.
​Why does this matter to food lovers?
Because respecting ingredients means understanding their entire journey. Whether it's a systemic loss or a behavioral waste, it all drains our planet's water, spikes greenhouse gases, and threatens global food security.

This approach promotes transparency, builds consumer trust, and fosters appreciation for the farmers’ craft. It also highlights Japan’s cultural respect for diligence, precision, and gratitude in everyday life.

In Haiti, one of the poorest countries in the Western Hemisphere, some families resort to eating what are known as “mud cookies” or bonbon tè to survive. These cookies are made from a mixture of clay, salt, and vegetable oil, shaped into flat discs, and dried under the scorching sun.

This heartbreaking practice is not a cultural tradition but a response to extreme hunger and hardship. The clay used comes from areas like Hinche in central Haiti and is believed by some to contain minerals that help ease hunger pangs. However, in reality, these cookies provide little to no nutrition and can even be harmful when consumed regularly.

People turn to mud cookies when food prices rise beyond reach or when natural disasters, political instability, or droughts disrupt access to food. For many, especially in impoverished communities such as Cité Soleil, this is a desperate way to silence hunger when there is simply nothing else to eat.

Journalists from major outlets like BBC, CBS News, and Reuters have verified this situation through firsthand reports, showing how deep economic inequality and chronic food shortages have forced people into such conditions. Health experts warn that depending on mud cookies can lead to malnutrition, infections, and long-term health problems.

This tragic reality reminds the world how fragile access to food can be in crisis-stricken nations and how important global compassion and aid truly are.

🌍 Food Waste: A Silent Crisis We Can’t Ignore

Every year, around 1.3 billion tons of food—almost one-third of all that is produced—ends up wasted. (FAO, 2011). This waste happens at every stage of the supply chain, from farms to households.

But here’s the catch: when food is wasted, it’s not just the food that’s lost.

🚰 Water used to grow it is wasted.

⚡ Energy & labor that went into production are wasted.

🌱 Greenhouse gases are emitted when food rots in landfills.

Meanwhile, nearly 828 million people around the world still go to bed hungry (FAO, 2022).

🍯 Honey: The Only Food That Never Spoils

When we think about food, shelf life is always a concern. But honey? It plays by its own rules.
Archaeologists have discovered jars of honey inside ancient Egyptian tombs — some over 3,000 years old — that are still perfectly edible today.

So, what’s the secret behind honey’s immortality?
🔹 Low Water Content – With around 17% moisture, honey doesn’t provide enough water for microorganisms to thrive.
🔹 High Acidity (pH ~3.2–4.5) – The acidic environment prevents bacterial growth.
🔹 Natural Antimicrobials – Bees add an enzyme, glucose oxidase, which produces small amounts of hydrogen peroxide — a natural preservative.
🔹 Sugars & Osmotic Effect – The high sugar concentration draws water out of microbes, effectively dehydrating and killing them.

Even if honey crystallizes over time, it’s not spoiled — simply warm it gently, and it returns to its liquid gold form.

Hey there! I'm Ashik Harun, Founder of Khaddology.

In a world where food insecurity, climate shocks, and waste are daily realities, there’s one thing often overlooked in solving these challenges:

As students, we study food science, agriculture, nutrition, sustainability…
But how often do these insights reach the people who need them most?

That’s why I started Khaddology — "Khaddo" in Bengali stands for "Food" and "logy" means "Knowledge". So, It is a platform to make food systems knowledge accessible, creative, and engaging.

From quirky food facts to serious discussions about waste and food safety, Khaddology is my way of:
