🐟πŸ₯” One-Pan Salmon with Baby Potatoes & Asparagus
πŸ›’ Ingredients
4 salmon fillets
500 g baby potatoes (halved)
1 bunch asparagus
2 tbsp olive oil
2 tbsp butter (melted)
3 cloves garlic (minced)
Salt & black pepper
Paprika or chili flakes 🌢️ (optional)
Fresh parsley (chopped)
Lemon wedges πŸ‹

Heat oven to 200Β°C (400Β°F).
Toss potatoes with olive oil, salt & pepper. Roast 20 min.
Add salmon & asparagus to the tray.
Mix butter + garlic + spices, spoon over everything.
Bake 12–15 min until salmon flakes.
Finish with parsley & lemon juice.

For crispy salmon, broil 2–3 min at the end πŸ”₯

Shrimp & Veggie Power Bowl
Ingredients:

8–10 shrimp, boiled or lightly sautΓ©ed

2 boiled eggs, halved

1 cup cherry tomatoes, halved

1 cup lettuce leaves, chopped

1 cup cucumber slices

Β½ cup sweet corn

1 tsp sesame seeds for garnish

Salt & pepper to taste

Dressing: 1 tbsp olive oil + 1 tsp lemon juice + Β½ tsp soy sauce

Instructions:

1. Prepare all vegetables: wash, slice, and set aside.

2. Boil shrimp until pink, season with a pinch of salt and pepper.

3. Arrange lettuce at the base of a bowl.

4. Top with shrimp, boiled eggs, tomatoes, cucumber, and corn.

5. Drizzle with the olive oil–lemon dressing.

6. Sprinkle sesame seeds on top and serve fresh!

For the Roasted Potatoes:

For the Salad Base:

Preheat oven to 200Β°C (390Β°F). Toss baby potatoes with olive oil, parsley, salt, and pepper, then roast for 25–30 minutes until golden and crispy. Season chicken with paprika, garlic powder, salt, and pepper, then sear in olive oil over medium heat for 5–6 minutes per side until fully cooked.
