π₯ Loaded BBQ Chicken Power Bowl β Crispy, Creamy & Crazy Delicious! ππ₯π½

π Ingredients
For the Chicken:
2 boneless chicken breasts π
1 tsp smoked paprika πΆοΈ
1/2 tsp garlic powder π§
Salt & pepper to taste π§
1 tbsp olive oil π«
4 tbsp BBQ sauce π₯«
2 tbsp mayonnaise (for drizzling) πΆ
For the Roasted Potatoes:
300g baby potatoes, halved π₯
1 tbsp olive oil π«
1/2 tsp dried parsley πΏ
Salt & pepper π§
For the Salad Base:
2 cups chopped romaine or mixed greens π₯¬
1/2 cup shredded cabbage π₯
1/4 cup sweet corn π½
1/4 red onion, thinly sliced π§
1/4 red bell pepper, sliced β€οΈ
π¨βπ³ Instructions
Preheat oven to 200Β°C (390Β°F). Toss baby potatoes with olive oil, parsley, salt, and pepper, then roast for 25β30 minutes until golden and crispy. Season chicken with paprika, garlic powder, salt, and pepper, then sear in olive oil over medium heat for 5β6 minutes per side until fully cooked. Brush with BBQ sauce and let it caramelize for a minute on the pan. Slice once slightly cooled. Assemble bowls with a bed of greens, cabbage, corn, onions, and red peppers. Add roasted potatoes and sliced BBQ chicken on top. Drizzle with mayonnaise and more BBQ sauce if desired. Serve warm or cold!
