Most medical doctors aren't in the business of promoting health. They're trained to treat symptoms once they appear which, as it turns out, is also more profitable.

And it's not just fruits and vegetables. Plant-based foods have come such a long way. Yes, let's eat our fruits and veggies but none of it has to be boring anymore.

If you've been following along here, you know that my husband, Andy and I planned our summer trip to Europe around the total solar eclipse in Spain.

We hoped the eclipse would be spectacular. It was. But it was also just one part of a wonderful trip that took us from Madrid to Burgos, Spain, and then through Belgium and the Netherlands.

Along the way, we ate plenty of vegan food, met fabulous people, dealt with the inevitable travel mishaps, and walked a LOT.

I finally pulled my travel notes and photos together and wrote about the whole experience, including what it was actually like to stand on a hillside in Spain as day suddenly became night.

The new article is up now and you can read it here. https://dianerosesolomon532979.substack.com/p/we-planned-a-trip-around-a-total

Last stop Amsterdam. Two days and a single post don’t do it justice. We attended a Wilco show at the Paradiso, connected with my friend Lydia who I met volunteering in India, walked through Vonselpark, enjoyed a few choice paintings at the Rijksmuseum and loved the food at Vegan Temple Bar . We took in a few other sights but we shall leave this post at that. So much more to explore. We will be back!

Now that I understand the way eating a whole food plant-based diet works, I aim to eat a variety of plant food at every meal, every day and every week.

Day 2 in Delft wasn’t quite as calm as day one because the students (it’s a university town too) began their orientation week that day. But the kids were having fun and their excitement was infectious. In the canal shot above we watched a group of kids take turns wakeboarding. Someone was on the far bridge pulling them via a cable. We visited the famous Royal Delft earthenware factory and museum ( you may be familiar with Delft blue) and enjoyed pizza at a small chain called Pizza Beppe in the square.

Perhaps you’ve seen the film: The Last Pig? ( If not, I highly recommend.) The filmmaker, Allison Argo made a new film called Forever Home about a unique animal sanctuary in North Carolina. “Where animal rescue meets sustainable architecture.” They’re having a watch party from 9/26-10/3 that you can watch from home. Check out the flyer to learn more and purchase tickets.

Next stop Delft, The Netherlands! It was much quieter than the busy Belgian towns we had visited. My system was ready for a slower pace for a couple of days. Our first night we found a great local restaurant called ‘t Postkantoor which was previously a post office. The church in the main square is the second tallest in The Netherlands.
