🌿 THE EASIEST SAVORY CAKE 🌿
Perfect for picnics, lunch boxes, or a simple summer dinner.
✨ You’ll need:
• 5–6 eggs
• A big handful of spinach (fresh or frozen)
• 70g Parmesan, grated
• Zest of ½ lemon
• 250g canned chickpeas (drained) OR 3 tbsp flour
• Salt, to taste
Optional fillings:
• Feta sticks
• Cooked baby potatoes or potato chunks
✨ Method:
Add the eggs, spinach, Parmesan, lemon zest, chickpeas (or flour), and salt to a blender.
Blend until smooth and vibrant green.
Pour into a lined or greased loaf/cake tin.
Push feta sticks or cooked potatoes into the batter.
Bake at 180°C (350°F) for about 30 minutes, until set and lightly golden.
Serve warm or at room temperature with:
🥣 Thick yogurt
🌿 Fresh dill
🍋 A squeeze of lemon juice
