ALUNA DAIQUIRI

A fresh, easy to make classic serve, named after a Cuban beach way back in 1898.

-60ml Aluna Coconut Rum
-25ml Lime Juice
-15ml Sugar syrup

Add all the ingredients to the shaker and shake hard.

Strain into a coupe or a wine glass and add a twist of lime

This small batch hand-crafted bourbon is made from a three-grain recipe that merges southern traditions with spicy rye and smoothing malt. The deep amber colour hints at the warm flavours of cedar, vanilla, toffee and spice you will find on the palate which lingers on the long lasting finish that you can keep on savouring.

Raicilla La Venenosa Puntas

Raicilla has been produced for over 500 years in the Mexican state of Jalisco, although it originally was considered mezcal. That was until it adopted a new name in the 1780’s as a way to avoid further taxation from the Spanish Crown.

If you've never had the pleasure of a Raicilla, then this is as good a place to start as any. Fermented in a 200 litre oak vat and double distilled in a stainless alembic still, the La Venenosa Puntas is definitely worth a try!

The name of this Raicilla refers to the spirit's production method.

"Punta" is the "point" during the early part of the second distillation with the finest aromas and flavours, qualities that are abundant in this smooth, subtle and elegant spirit.

The Vieux Carré was invented by Walter Bergeron in the French Quarter in the late 1930s. Bergeron was the head bartender at what would become the famous Carousel Bar inside the Hotel Monteleone.

Fun fact: The Carousel Bar was a popular hang out for many famed authors including Ernest Hemingway and Truman Capote.
The Vieux Carré first appeared in print in Stanley Clisby Arthur’s 1937 Famous New Orleans Drinks and How to Mix ‘Em.

Our recipe:

- 25ml. FEW Bourbon
- 25ml. VSOP Cognac
- 25ml. Sweet vermouth
- 2 Barspoons D.O.M. Bénédictine
- 2 Dash Peychaud’s bitters
- 1 Dash Angostura bitters

Garnish: cocktail cherry

Prep:

Put all ingredients in to a mixing glass, add ice and stir the drink for approximately 45 sec.
Pour the drink in a chilled coupe glass.

FEW bourbon is the excellent choice for your vieux Carré. In combination with the other ingredients Few bourbon with is high rye content will add extra complexity and spice to the drink.

Our recipe:

- 25ml. FEW Bourbon
- 25ml. VSOP Cognac

- 2 Barspoons D.O.M. Bénédictine
- 2 Dash Peychaud’s bitters
- 1 Dash Angostura bitters

Garnish: cocktail cherry

FEW is hand-crafted through a small-batch process in charred oak barrels to age its bourbon whiskey.

The Aviation is a classic gin cocktail dating back to the turn of the 20th century, and it first appeared in Huge Enslinn’s book “Recipes for Mixed Drinks” in 1916 while he was tending bar at New York City’s Hotel Wallick. In the ensuing decades, it was all but forgotten. That’s because one of the drink’s primary ingredients, crème de violette liqueur, disappeared from the market during the 1960s. Making this cocktail with an Americcan style gin like Bluecoat gives a beautiful expression of this cocktail.

Recipie:

- 45ml. Bluecoat American Dry Gin
- 15ml. Marachino Liqueur
- 15ml. Fresh Lemon Juice
- 1 Barspoon Creme De Violette

Garnish: Lemon Zest

Put all ingriedients it to a shaker, add ice and shake for 15 sec.
Double strain the drink in to a chilled coupet or martini glass.

The Aviation with Bluecoat American Dry gin is a very ellegant but full bodied expression of this classic gin cocktail, the expressive citrus notes we find in Bluecoat American Dry Gin works perfct in the Aviation.

Recipie:

- 45ml. Bluecoat American Dry Gin
- 15ml. Marachino Liqueur
- 15ml. Fresh Lemon Juice
- 1 Barspoon Creme De Violette

Garnish: Lemon Zest

Put all ingriedients it to a shaker, add ice and shake for 15 sec.
Double strain the drink in to a chilled coupet or martini glass.

- 100ml. Three cents pink grapefruit soda
- 10 ml. Fresh lime juice

Build the drink over ice cubes, give it a little stir and garnish with a lime or grapefruit wedge. Give the glass a little salt rim.

The name Ocho:

Ocho means ‘eight’ in English.

– This tequila is made from sample number eight created by the
Camarenas for Tomas Estes.

– It takes eight days from when the agaves reach the patio (at the
distillery) until Tequila Ocho Blanco is produced.

– It takes an average of eight years for the agaves to ripen before being
harvested for Tequila Ocho.

– It takes about eight kgs. of agave to make 1 liter of Tequila Ocho.

– Reposado is rested in American Oak for 8 weeks and 8 days.
