Most of us are chasing protein, but fiber is actually what we’re missing the most 🌿 — (for your ref. 97% of people don’t meet their daily fiber intake, Clinical Nutrition Journal 2025).

What if your cookies could answer both?

These easy almond cookies are made with just 5 real ingredients:

✨ Almond flour
✨ Psyllium husks
✨ Coconut sugar
✨ Cashew nut butter
✨ Soy milk

No refined sugar. No butter. No eggs. 100% vegan and gluten free.

The secret weapons? Almond flour for natural plant-based protein (you can also make your own for a cheap version), and psyllium husks for FIBER (easily available at your organic shop, everywhere)!! Psyllium is one of the richest natural sources of soluble fiber. They help support your gut, regulate your blood sugar, improve satiety, and bind everything together beautifully in this recipe (and in baking).

Green fritters can be insanely delicious if you do them right. 🌿🌿🌿

This is my go-to “I have nothing in the fridge + no time” recipe 😅 and somehow it’s always a hit.

These leek and peas fritters are crispy outside, soft inside, fresh, lemony, herby and yes, high in plant protein, vegan and plant-based 🌱👏🏻

I’ve shared it quietly before but it’s time this one gets the spotlight. 😋

WHY YOU’LL SAVE THIS:
✨ can be ready in under 20 minutes
✨ pantry friendly
✨ packed with fiber + plant protein + gut boost
✨ kid-approved (tested 😄)

INGREDIENTS:
– 2 cups green peas (freshly blanched or defrosted)
– 1/2 cup leek
– 1 spring onion
– 40 g chickpea flour (or spelt/wheat)
– 2 garlic cloves
– 1/2 lemon (juice + zest)
– salt and pepper

HOW TO MAKE IT:
Pulse everything for 5–10 seconds max bc you want texture, not a purée.

Shape into 6 fritters.
Pan-cook 3–4 min per side until golden + slightly crispy.
(Gently flatten them for that perfect texture.)

THE LITTLE EXTRA THAT CHANGES EVERYTHING for me :
That lemon zest + spring onion combo = freshness boost
It gives that « zesty Michelin star » vibe 💫

SERVING IDEA:
Perfect with a dollop of plant-based yogurt (mixed with chop dill and 🌶️), tahini drizzle, or just as is.

Easy lunch, light dinner, or your new “neat girls dinner” 💫

Late Easter prep? Same 😅

So I made this instead :
→ chocolate bark
→ strawberries + nuts
→ date caramel sweetness

Low sugar and SO good. 💗🫶🏻

But here’s why this one is different 👇🏻
→ seasonal strawberries 🍓
→ mix of nuts = different nutrients
→ 75%+ dark chocolate = better for your body, mixed with high phenolic olive oil. Hello antioxidants!
→ date caramel (just 6 dates, water + salt) and BTW you need only 3 to 4 tablespoons (!)
→ less sugar than classic date bark = no crazy glucose spike
→ + chia seeds for a little protein boost

Simple, intentional, and honestly addictive 🍫

You still have time. 30 min + freeze for 2h or more !

The motto was just showing up and living it thanks to the amazing x .

And once you try this “Sunflower Spread”
you won’t go back to store-bought vegan cheese. 😅

This creamy herbed spread is:
→ rich
→ savory
→ actually good for you (naturally rich in vitamin E and support your immune system)

Made from:
sunflower seeds + cashews
nutritional yeast (that cheesy taste 👀)
mustard + spices
a touch of soya cream (or any plant milk)
fresh spring onions for this classic ´herby’ touch 🌿

Blended into something SO addictive.

I’ve been making it on repeat at home…

yesterday : tomato + chickpeas

finished with
good extra virgin olive oil
toasted pine nuts for the crunch, the magnesium and the zinc
lemon + berry vinegar
fresh sichuan pepper, this is wow ! 🤩

simple… but everything changed.

So many options, but if you’re into acai or something lighter → is a go-to !

— Get lost in the Cours Saleya flower market (it’s a must), 💐
or if you’re there on a Saturday → head to the Libération market, they have beautiful flowers too.

— For a little city moment → stop by Galeries Lafayette Nice Masséna
and enjoy the park right next to it. It’s simple but honestly one of my favorite pauses.

— Don’t skip the port ⚓
Such a different energy there.
Coffee or matcha for takeout at Alvin’s = underrated spot !! 💗

— For lunch or dinner, take your time. 😃
Nice is all about long meals, sunshine, and no rush.
If it’s warm enough → go for a rooftop.

Living in the Middle-East right now has made me realize more than ever how fragile life can be. And Bahrain is doing such a great job at keeping people safe. 🙏🏻

Friends and family truly are the strongest pillars in our lives.

I also see how differently we all react to uncertainty, and that’s normal.

For me, creating a small routine has helped a lot. I think my brain feels safer this way.

We all have our own way to feel or react in this time of uncertainty. Hope you found yours to help you stay calm and grounded.

Holding on to hope that this will end soon.
