A popular vegetable included in many Bhutanese dishes when in season, Asparagus is a herbaceous perennial that is part of a wave of organic farming emerging from Bhutan- but how exactly is it harvested?

Since organic farming strives to utilize natural processes, refrain from using artificial chemicals, and advance sustainability and environmental responsibility, the process becomes an important hands on affair:

✨ Hand harvesting of asparagus begins when spears are 8 to 10 inches long
✨Until the harvest season is over, fern development should be prevented.
✨With a sharp knife and just below ground level cutting, asparagus spears should ideally be harvested in the morning when they are still fresh.

After being harvested, they are prepared to go from farm to table with washing, trimming, and packaging- with no chemicals or pesticides in sight. Continuing the cycle of organic asparagus cultivation is good for the environment, local farmers, and you!

🍃 Ap Dolay is one of the organic asparagus farmers from Jiew, part of the National Organic Program spearheaded by the Department of Agriculture since 2016 to train local farmers across Bhutan to succeed at organic farming. With an objective to promote commercial organic asparagus production in ten western Dzongkhags, the Department provided seeds, training, and a business plan to ensure success:

“From the Dept of Agriculture we have received 3 training sessions. Firstly to impart knowledge and secondly to promote self sufficiency. The government had good thoughts and everything from questions and answers to how to do the work properly. I would like to express my gratitude towards our government for providing us, the farmers with the knowledge. My name is Dolay, and I am an asparagus farmer.”

Farmer Ap Dolay’s unwavering passion to meticulously grow and harvest organic produce is a story of Bhutan’s commitment to sustainable agriculture and preservation of age-old agricultural practices. Growing organic asparagus uses manure instead of chemical fertilizers and people working by hand to fertilize. Because of this, the asparagus grows well. Organic is best, Ap Dolay shared, to avoid disease, benefit the body, and continue the tradition of organic farming in Bhutan.

Diving into the vibrant green of spring with organic asparagus farming in Bhutan 🌱🇧🇹.

In Bhutan, asparagus grows as a herbaceous perennial, disappearing in winter only to burst forth in spring. The spears are harvested in spring and early summer, turning into ferny fronds that feed the plant's crown below for the next season's growth. Our farmers embrace a journey of patience and care, nurturing these crowns into bountiful harvests through a meticulous planning process, regular watering, and fostering strong roots.

Cultivated asparagus was first introduced to Bhutan in 1971. It is grown for its spear-like shoots and has a 15-year economic life span. Asparagus is high-value, with fewer instances of pests and diseases that is a nutritionally well-balanced vegetable, and has emerged as a key crop for organic farming.

Across meandering roads on top of gigantic eastern mountains lies the community of Bartsham. Mostly known as the home of many Buddhist pilgrims and eminent teachers, the slopes of Bartsham change into vibrant hues of magenta in late October - the communities have embraced an overwhelming production of Quinoa.

National Quinoa Coordinator Namgay Wangdi shares that the program arrived to the eastern part of the country some time in 2018.

“It was brought here because, be it land or other conditions, it was very suitable here. Hence, together with agriculture officials, we discussed and asked for interested farmers. We had a total of 6 interested farmers and that is how it first began. Since then, because of good income and money, we had 50 prospective quinoa farmers by next year. Today we have 200 quinoa farmers.”

There are countless elements that limit agricultural success in Bhutan - terrain, logistics, lack of adequate farming resources, labor and more. But despite these drawbacks, rural Bhutan is witnessing a quiet revolution. In fields overlooking breathtaking valleys, a golden grain native to the distant Andes is taking root - quinoa.

Introduced just a decade ago, this ancient superfood is proving to be a boon for rural farmers, offering a path towards improved food security, income generation, and environmental sustainability.
