Vegetable Fried Rice

INGREDIENTS
2 cups basmati rice or long grain rice, rinsed (or 4 cups leftover cooked rice)
2 tbsp oil (sesame oil preferred)
3 garlic cloves, chopped
4 cups vegetables (green beans, carrots and green peas)
1 tbsp soy sauce
2 tsp white vinegar
¼ tsp ground black pepper
Salt to taste
Chopped spring onions (or scallions), to garnish
INSTRUCTIONS
Soak basmati rice in water for 20 minutes. Drain. Cook according to packet instructions. (I cooked rice in boiling water for 6-10 minutes). Drain. Set aside.
Meanwhile heat oil in a wok or large frying pan over high heat. Add garlic and sauté for 1 minute or until aromatic. Add vegetables. Stir fry for 3-4 minutes or until tender. Stir in cooked rice.
Add soy sauce, white vinegar and ground black pepper. Stir fry for 3 minutes.
Garnish with chopped spring onions

Seasoned Water Chestnuts

Waterchestnuts -Boiled and peeled
Salt to taste
Black pepper
Garlic 3-4 cloves
Butter

Heat a non stick pan, apply butter and place Garlic over it once butter starts melting, place water chestnuts and cover the lid. Make sure it is Cooked at really slow flame..
Wait for few minutes and flip the side
Once it's crispy season it with salt and pepper

Banana walnuts cake

3 banana ripped
¾ cup sugar or 1 cup depending on sweetness of banana
½ cup oil or butter
1 tsp vanilla extract
¾ cup maida / plain flour / all-purpose flour
¾ cup wheat flour / atta
1 tsp baking powder
1 tsp baking soda / sodium bicarbonate
¼ tsp cinnamon powder / dalchini powder
pinch of salt
½ cup walnut

Instructions

Firstly, take ripped bananas and cut them into pieces.
also add sugar and mash the banana.
furthermore, add oil and vanilla extract.
also sieve maida, wheat flour, baking powder, baking soda, cinnamon powder and salt.
blend and combine all the dry ingredients with the banana puree.
furthermore, add walnut and fold gently.
transfer the cake batter into the cake mould or bread mould.
pat the tray twice to remove the air incorporated into the batter.
place the tray into preheated oven. bake the cake at 180 degree celsius or 356 degree fahrenheit for 40 minutes.
further, allow the cake to cool completely.
and later cut to slices and serve.
finally, serve the eggless & vegan banana bread or store in airtight container.

Healthy appam

Semolina – ½ cup
Oats - 1/2 cup
Curd – ½ cup (whisked)
Green chilly – 1 finely chopped
Ginger – ½ inch finely chopped
Salt – ½ tsp or to taste
Sugar - 1/2tsp or to taste
Mustard seeds – ¼ tsp
Curry leaves – 7 to 8 (chopped)
Shredded coconut - 1 tbsp
Urad dal and chana dal - 3 tsp
Shredded bottole gourd - 1/2 cup
Hing a pinch
Sesame seeds - 1 tsp
Coriander - 1/4 cup
Cashews - 7 to 10 chopped

Instructions

Take semolina, oats and bottle gourd in a big mixing bowl.
Now add whisked curd to it and mix really well.
To the batter add finely chopped green chilies, ginger paste, salt and sugar Mix everything really well. If the batter appears to thick then add some water to it.
Cover and keep the batter aside for 10 to 15 to rest. Use it later to make appams.
Batter is now ready. Add mustard seeds to it. For this, heat 1 tsp oil in a small wok or pan and add mustard seeds and all other ingredients to it. When the seeds splutter, add curry leaves into it. Saute for a while.
Pour this tempering to the batter and mix well.
Preheat an appam maker and pour little oil in its each mold.
Fill each mold with the batter.
Cover and let them simmer for 3 minutes on low-medium flame.
When the appams get golden brown from beneath, flip the side and continue cooking until golden brown from this side as well. It can take 2 minutes. Cook the appams until they get golden brown on both the sides.
Take out the roasted appams in a plate and similarly prepare the rest as well.
Scrumptious and mouth drooling appams are ready. Serve them steaming hot with green coriander chutney, sweet chutney, tomato sauce or any other chutney as per your desire and taste and relish eating.

Pumpkin soup

150 gms Pumpkin
75 gms carrots ( diced )
2 medium size Onions
8- 10 cloves garlic
1/2 inch ginger
1 cup milk
Salt
Pepper
Nutmeg
Cinnamon powder

Pressure cook all the veggies with garlic and ginger for 7 to 10 minutes
Grind everything adding milk and 1/4 tsp nutmeg and cinnamon powder

Add salt and pepper to taste and garnish with parsley

500 Gram Okra (Bhindi)
2 Large Onions
1-2 Green Chillies (Hari Mirch)
1/2 Inch Piece of Ginger
2-3 Cloves of Garlic
1 Teaspoon Cumin Seeds (Jeera)
1 Teaspoon Red Chilli Powder (Lal Mirch)
1/2 Teaspoon Turmeric Powder (Haldi)
2 Teaspoon Coriander Powder (Dhania Powder)
1/2 Teaspoon Garam Masala
1 Teaspoon Dry Mango Powder (Amchur)
1 Teaspoon Salt, or according to taste
1 Tablespoon Oil

Heat some oil in a pan and add Cumin Seeds to it. Roast the Cumin Seeds for a few seconds till they start to splutter.
Add some thinly sliced onions to the pan. Also add ginger, garlic and green chilli paste. Saute for 3-4 minutes till the onions start looking translucent.
Add chopped Okra (Bhindi) to the pan and mix with the onions. You can chop the Bhindi into small pieces or long slices. Make sure to let the Bhindi dry thoroughly before chopping it, otherwise it will become sticky.
Add Red Chilli Powder, Turmeric Powder, Coriander Powder (Dhaniya Powder), Garam Masala, Dry Mango Powder (Amchur) and Salt
Fold the Okra and Onions along with the spices to mix everything well.
Then cover with the pan with a lid and cook the vegetables on a medium flame.
It will take around 15-20 minutes for the Okra to be completely cooked. Keep stirring it occasionally in between. Turn off the heat when the Bhindi is cooked and turns a darker shade of green
Bhindi Do Pyaza is now ready. Serve it hot with fresh chapati or paratha. It also goes very well along with some Boondi Raita or Dal.

Garlic oats crackers
3/4 cup oats
3/4 cup wheat flour
1 tsp baking soda
75 gms butter
2 tsp curd
Salt to taste
1 tsp Ajwain
3 tsp Mix herbs

Mix butter, oats and wheat flour with finger tips
When it turns to bread crumbs like texture add baking soda, ajwain, salt and mixed herbs
Mix with finger tips ( do not over do the dough)
Lastly mix curd (not much )
Form a dough, cover it and refrigerate it for 20 to 25 min.
After resting the dough, flatten it with a rolling pin and with the help of cookie cutters shape it
In a pre heated oven bake it for 15 min at 150 degree.

Serve it with tea coffee or green tea.

Salad wrap

INGREDIENTS

4 tortilla wraps ( home made thick roti )
1 cucumber ( cut julienne strips )
1 carrot ( cut julienne strips)
1 cup mix bell peppers( cut julienne strips)
1 little red onion ( cut julienne strips )
8 sprigs of parsley,chopped
1 head of lettuce
100 gram paneer
salt and pepper
Garam masala
Turmeric
Red pepper power
Lime juice - 1 tsp
Mint Mayo - see previous post
Tomato sauce

Instructions

Mash paneer - add salt, turmeric, garam masala, lime juice and red pepper power, mix everything and form a small cutlets ( oval and long )

Lay the wraps on a flat surface. Spread mint Mayo and tomato sauce on the wrap. Add the lettuce first and then put the rest of the salad ingredients on top and spread evenly. Put paneer cutletans Fold in two of the four side of the wrap about 1/2 inch. (So fold top and bottom) Then take the other side and wrap it up tightly! Grill for 2 min in over griller, Cut wraps in half or leave whole.
