Happy Easter!
French Bread, pumpkin pies, and a blueberry pie as well as a ham casserole! Good day of baking!No Fail Pie Crust
(Yields 3 double crusts)

5 cups flour
2 tsp salt
2 tsp baking powder
1 pound of lard
1 egg
1 tbsp vinegar

Instructions:
Mix flour, salt, baking powder and lard together to make a fine
texture.
1. In a cup put the egg and beat it with a fork.
2. To the beaten egg, add 1 tablespoon of vinegar.
3. Fill cup with ice water to equal 1 cup of liquid.
4. Add the liquid egg, vinegar and water mixture to dry ingredients.
5. Mix well and roll out.
6. Do not handle dough too much

Pumpkin Pie
For 2 Pies

796mL Pure Pumpkin
4 eggs
2 Cups Brown Sugar (packed)
1/2 tsp ginger
1/2 tsp cinnamon
1/2 tsp salt
1 1/2 Cups 10% Blend

Instructions:

1. Combine all ingredients in a bowl and thoroughly mix.
2. Bake at 425°F for 20 minutes. Then lower temperature to 350°F for 45 minutes or until a sharp knife comes out clean in the middle.How to make

Blueberry 🫐 Pie 🥧
Ingredients:
Pastry for a 2 crust pie
1 cup sugar
1/4 cup flour
4 cups blueberries
1 tablespoon lemon juice
2 teaspoons of sugar (for the top)
2 tablespoons butter

Directions:
Roll pastry and line 9 inch pie plate
Roll out top crust and have ready
In large bowl stir first amount of sugar, flour and blueberries together until
mixed well
Let stand 10 minutes
Pour into pie shell
Drizzle with lemon juice
Add a few dollops of butter - evenly distributed over the berries
Trim and crimp to seal
Cut a few vents in top (if using a full piece of dough)
Sprinkle top of crust with the remaining sugar
Bake in 350 degree oven for 45 minutes until cooked and brown
May need a cookie sheet under it as it sometimes runs over in oven

Homemade Naan (No Yogurt!)

Today I didn't have any yoghurt on hand, but I still wanted to make naan bread to go with our curry chicken that I made in the slow cooker! So I tried making naan bread with cream 10% milk fat. They are delicious. Here is my recipe! (I actually tripled it!)

🛒 INGREDIENTS
🌾 Dry Yeast
• 1½ tsp dry yeast
• ¼ cup (50 ml) warm (not hot!) water 💧�• ½ tsp sugar
🫓 Naan
• 2 + ⅛ cups (255 g) white all-purpose flour
• 1 tsp salt 🧂
• ½ cup (115 ml) 10% cream milk (or milk of choice 🥛)
• 1 tbsp olive oil 🫒 (plus more for brushing)
🧄 Garlic Oil (Optional but delicious!)
• 4–5 garlic cloves, minced
• 4–7 tbsp olive oil
• Pinch of salt 🧂

👩‍🍳 INSTRUCTIONS
🫧 Activate the Yeast
1. In a small bowl, mix water 💦 , yeast, and sugar with a whisk until dissolved.
2. Let sit about 10 minutes until foamy and bubbly 🫧
🫓 Make the Dough
1. In a large bowl, whisk together flour 🌾 and salt 🧂
2. Add activated yeast, milk 🥛, and olive oil 🫒
3. Stir, then knead with your hands until dough comes together 🤲
4. If needed, add 1 tbsp more almond milk (no more!)
5. Cover with a lid or towel and let rise 30 minutes to 1 hour ⏳
🔥 Cook the Naan
1. Divide dough into 6 equal balls ⚪⚪⚪⚪⚪⚪
2. Roll each to about ¼-inch thickness on a floured surface
3. Heat a frying pan or cast iron skillet over medium-high heat 🔥
4. Cook one side about 2 minutes until bubbles form 🫧
5. Flip and cook until browned and cooked through 🤎
6. Brush with garlic oil 🧄✨ before serving (optional but SO good!)

Perfect for dipping, scooping, or devouring warm straight from the pan 🤤🫓

My kids always request a special cake for their birthdays. And I've made about 99% of them! This year my middle daughter has requested a double layer chocolate cake with vanilla frosting (strawberry jam in the middle! (Good tip Dad!) and freeze dried strawberries on top. My son and I used our sweet roll recipe to try and make a Christmas tree with our rolls! We put a little piece of mozzarella cheese inside of each bun. I put Italian seasoning and butter on the top! They look pretty tasty!😋

Although now after rising and baking, they don't quite look like a tree anymore!

But I am sure they will be enjoyed at our Christmas potluck! 🎄

Fluffy Rolls

This yields three dozen medium size rolls

Ingredients:
1 1/2 TBSP yeast
2 tsp sugar
1/2 cup warm water
2 cups milk - scalded
1/2 cup sugar
1/2 TBSP salt
1/2 cup butter or margarine
2 Eggs
7 cups flour

Directions:
1. Combine yeast and water, sugar and allow to bloom for five minutes
2. Add eggs
3. Combine scalded milk (allow to cool to lukewarm), butter, remaining sugar and salt
4. Add 3 cups of flour
5. Gradually add rest of flour to form a soft dough
6. Put soft dough in a greased bowl
7. Turn dough once in bowl so that top of dough is grease
8. Cover and let rise till double-2 hours
9. Shape into balls and place in greased pans
10. Yields about 3 dozen small rolls
11. Let rise until double 1-2 hours (usually about 50g for small rolls and 65g for larger)
12. Bake at 400°F for 14-15 minutes until till lightly brown

Made some "Christmas Crack" with my kids. We put it in the Canadian freezer and it's almost ready!

Today's kitchen work! Not all baking. Even some no bake today! "Nuts and Bolts" aka Bit and Bites and home made bread!

Bits and Bites

Ingredients:
1 Tbsp seasoning salt
1 tsp marjoram
1 tsp savory
1 tsp garlic powder
1 tsp onion powder
1/8 tsp cayenne pepper
1 Cup melted butter

Instructions:
350g shreddies
350g cheerios
350g crispix
250g cheese puffs
250g cheese nibs crackers
2 Cups pretzels
2 Cups sesame sticks

1. Melt butter. Add all the the spices to the butter. Stir until combined.
2. Mix cereals in a large roasting pan.
3. Drizzle butter/spice mixture on cereals.
4. Bake at 250°F for one hour. Stir every ten minutes to ensure mixture doesn’t burn.

6. Bake in oven at 325°F for 60 minutes. Place a pan of water beside cake to create moisture in your oven. Remove water bath and bake for 20-25 more minutes.
*I baked this in a 10 inch tube cake pan. You could also use a loaf pan but it will probably take a bit longer to cook- so you’ll have to adjust your baking time.

This is one of our favourite recipes that we've had in our family for multiple generations. It's a treat that we enjoy at Christmas time!

 For us the best place to find gum drops is the Bulk barn in Canada 🇨🇦!

Gumdrop Cake

Thumbprint Cookies
1 ½ cup brown sugar
½ cup margarine
1 egg
½ cup boiling water
3- 3 1/2 cups flour
1 tsp baking soda
1 Tbsp vanilla

1. Cream sugar and margarine together.
2. Add egg and beat together with sugar and margarine.
3. Add boiling water and baking soda. Mix together. Add vanilla.
4. Add first two cups of flour one at a time.
5. Knead the same as bread, adding the final cup of flour gradually. Roll in balls and make an indenture with your thumb in the center of each cookie. Fill the thumbprint with jam or jelly.
6. Bake in 350°F oven for 8-10 minutes.
