Oma’s Summer Cucumber salad is her vinaigrette based German cucumber salad. No mayo or cream so it is naturally a perfect fit for a number of food allergies.

Oma’s Cucumber Salad

Serves 6

Ingredients:
2 Long English Cucumbers
1 teaspoon Sea Salt
3 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Lemon Juice
1 teaspoon Granulated Sugar
¼ Cup Fresh Dill, chopped finely

Directions:
1- Slice the cucumbers into very thin rounds. Place them in a large bowl and sprinkle the salt over them. Mix the salt into the cucumbers with your hands. Let them sit for 10-15 minutes.

2- Add olive oil, lemon juice and mix it into the cucumbers. There will be liquid in the bowl from the cucumbers and salt don’t drain this. Mix it in with the oil and lemon juice.

3- Sprinkle the sugar over the cucumbers and mix it in. Let the salad sit for 2-3 minutes.

4- Mix in the finely chopped dill. Serve or chill until serving.

Notes:
You can use apple cider vinegar instead of lemon juice.

If olive oil is not safe for you, use another neutral oil.

The cucumbers should be so thin you can almost see through them.

If you had told me a decade ago I would be shopping at the bulk barn for allergy friendly snacks and treats I would have not believed you.

What I didn’t know then is they have a fair amount of packaged treats and many of them are speciality items and are allergy-friendly.

This is one of the places we get holiday candy as they import the Moo Free brand from the UK.

I first learnt about it in a FB dairy-free group and we’ve been going there ever since.

We only buy professionally packaged snacks that we wipe down the outer packages at home. The bins aren’t for us with the cross contact risk.

If you miss pub-style crispy chicken wings this is the perfect chicken wing recipe for you!

You can buy split chicken wings in the meat section of many grocery store, Costcos, butchers, or meat wholesalers (like we used).

Crispy Air Fryer Chicken Wings

4 lb Split skin on bone in chicken wings, uncooked
1/2 Cup Gluten Free Cornstarch, or arrowroot starch
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/2 teaspoon Kosher Salt
1/4 teaspoon Ground Pepper
Neutral oil in a spray jar, high smoke point oil is best

1- Mix salt, pepper , garlic powder and onion powder with cornstarch or arrowroot starch in a shallow plate, set aside.

2- Lay the wings out in a single layer on a paper towel lined cookie sheet. Pat dry all the wings with a paper towel.

3- Preheat your air fryer. Dredge each chicken wing in the cornstarch mixture and lay them out on a parchment lined cookie sheet.

5- When the air fryer is finished preheating, load the wings in the basket. Don’t overcrowd the basket, do a single layer of wings leaving room around for the air to circulate. Put the basket in the machine. You will need to cook the wings in more than one cooking batch, depending on the size of your fryer.

6- Cook at 380°F for 24-28 mins, flip the wings halfway through at 14 mins. Check the temperature using a food thermometer to make sure they are cooked through. If they are crispy and 165°F inside, they are cooked. Toss the wings in salt and pepper after cooking or sprinkle to your taste or coat with a homemade sauce, if desired.

It wouldn’t be a heat-wave or summer without freshly squeezed lemonade!

Strawberry lemonade
Serves 10

5 mins

10 Cups Lemonade
1 Cup Strawberry Syrup, see notes
1 Lemon, sliced in rounds
6 Strawberries, sliced

1- Place all ingredients in a large serving bowl or drink jug and mix well.

2- Best served chilled or over ice.

3- Garnish with fresh lemon rounds and strawberry slices or mint.

Notes:

Find the strawberry syrup recipe on our website.

Works well for other berry or fruit syrups such as blueberry, pomegranate, or blackberry.

Use frozen fruit to keep the strawberry lemonade cool for parties.

Will store in the fridge for up to 3 days in an airtight container.

Things like what we have heard not only hurt us but they make those that say them look insensitive.
