Cooking in my Genes Sharing simple & seasonal recipes and inspiration for casual gatherings My name is Jess and I love food. I love to cook, bake and eat – in no particular order.

My love of food started at a young age (well, except for a few items I didn’t exactly fall in love with at first…a story on stir-fry will be shared later on). These days I cook and bake for those I love and to me there’s nothing better than the people I love, sitting around a table, enjoying a meal together. It all comes down to family, friends & food. That is what Cooking in my Genes is all about. Happy to have you on this journey with me!

This is the easiest dinner you’ll make this week! Baked feta, veggies, beans, all on one pan.

And the best part?! Each serving has 16g protein + 10g fibre!

Ingredients:
540 ml can butter beans, drained & rinsed
1 pint baby, grape or cherry tomatoes
2 bell peppers, cut into 1 inch pieces
1 medium red onion, 1/2 inch slices
3 tbsp olive oil
1 tsp garlic powder
1 tsp dried thyme
1 tsp dried oregano
1 tsp salt
1/4 tsp chili flakes
150-200 g feta cheese, sliced into 6-8 pieces
Garnishes: ground pepper, lemon wedges & a drizzle of olive oil
For serving: arugula, grains of choice or pita/crusty bread, Greek yogurt

Instructions
1. Preheat oven to 400F. Line a large sheet pan or baking sheet with parchment paper.
2. Add the rinsed beans, baby tomatoes, bell pepper pieces and sliced onion to the parchment lined sheet pan. Drizzle over 3 tbsp olive oil, garlic powder, dried thyme, dried oregano, salt and chili flakes. Toss to combine and make sure everything is well coated by giving it a good stir on the sheet pan. Nestle the feta pieces in between the seasoned vegetables and beans.
3. Add the sheet pan to the oven and bake for 25-30 minutes or until the feta has softened and the tomatoes are starting to burst.
4. Drizzle with extra olive oil, squeeze on some lemon juice and add some fresh ground pepper. Serve with arugula, grains of choice or pita/crusty bread and Greek yogurt if desired.
