🍝 Creamy Microgreens & Mushroom Pasta
A cozy, vegetarian dinner that feels indulgent but is packed with plant power.
Serves 2–3 | Ready in 25 minutes
🧄 Ingredients:
250g (½ lb) pasta of choice (tagliatelle, fettuccine, or penne work great)
1 tbsp olive oil
2 cups mushrooms (cremini, oyster, or shiitake), sliced
2 cloves garlic, minced
½ cup heavy cream or coconut cream (for dairy-free)
1 small handful Urban Roots radish microgreens, finely chopped
1 tsp lemon zest
Salt & pepper to taste
Optional: grated parmesan or nutritional yeast for topping
Extra microgreens for garnish
🍳 Instructions:
Cook pasta according to package directions. Reserve ¼ cup pasta water.
In a skillet, heat olive oil over medium heat. Add mushrooms and cook until golden brown (5–7 min).
Add minced garlic and cook another minute.
Stir in cream and reduce heat. Let it simmer for 2–3 min until slightly thickened.
Add chopped microgreens and lemon zest. Stir to wilt slightly (30 seconds).
Toss in cooked pasta. Add a splash of reserved pasta water if needed to loosen the sauce.
Season with salt and pepper to taste.
Serve topped with parmesan (or nutritional yeast) and a fresh sprinkle of microgreens.
