Spelt Bran has joined the Sabatier Heritage Foods lineup, celebrating the prairie grain traditions at the heart of our craft. To mark the launch, we’re releasing our first signature recipe: rich and delicious Spelt Bran Truffles.

Spelt Bran Truffles
Ingredients:
½ cup of SHF Spelt Bran
1 cup of smooth nut butter of your choice
¼ cup of maple syrup
3 tbsp unsweetened cocoa powder
1 tsp vanilla extract
Pinch of salt

Directions:
1. In a bowl, mix together the nut butter, maple syrup, vanilla, cocoa powder, and salt until smooth.
2. Fold in the spelt bran until a dough is formed.
3. Roll into 1 inch balls and chill in the fridge for 20 minutes, then enjoy.

Thank you to everyone who came out last week for the salsa competition at Hillhurst Sunnyside Farmers Market. Due to popular request here is the recipe for our Pico de Thai-o salsa, a fantastic topping for any powerbowl made with our Pearled Spelt.

2 cups diced tomatoes
1/2 cup finely diced white onion or shallot
1 serrano pepper, minced (or 1/2 for mild)
1/2 cup chopped cilantro
1 tbsp fresh ginger, microplaned
1 garlic clove
1 tbsp lemongrass inner core, minced ultra‑fine
1 small clove garlic, microplaned (optional)
1 tbsp honey
2 tbsp lime juice
1 tbsp red wine vinegar
3/4–1 tsp salt

Instructions
1 Microplane the ginger and garlic. Beat the lemongrass with a rolling pin until the fibres come apart and then cut into confetti.
2 In a small bowl, mix ginger, garlic, lemongrass, honey, 1 tsp lime juice, and 1 tsp rice vinegar. Let bloom for 10 minutes to soften fibers.
3 Combine tomatoes, onion, serrano, and cilantro in a mixing bowl.
4 Fold the aromatic mixture into the vegetables.
5 Add the remaining lime juice and red wine vinegar.
6 Season with salt until the salsa tastes bright and balanced.
7 Rest 10–15 minutes before serving to let flavors integrate.

With summer here, there are two things Calgarians enjoy - BBQ and Stampede. This recipe for Cowboy Spelt is our response to both with roots in our cattle-herding history and a deep rich flavour that will make you shout "Yahoo!"

Cowboy Spelt
Ingredients
-1 cup pearled spelt, rinsed
- 2 cups beef or chicken broth
-1 tbsp neutral oil
-1 smoked sausage, sliced (like kolbasa or andouille)
-1 yellow onion, diced
-1 bell pepper, diced
-1 jalapeno, diced (optional)
-1 tbsp tomato paste
-1-2 Tbsp maple syrup (or brown sugar as alternative)
-1 tsp smoked paprika
-1 tsp cumin
-½ tsp black pepper
-1 Tbsp Worcestershire sauce
-½ cup strong black coffee
-1 540ml can of crushed tomatoes
-Salt to taste

Instructions
-Bring broth to a boil, add the pearled spelt, reduce to a simmer, and cover for 20 minutes. Then drain and set aside.
-In a heavy pot, heat oil over medium heat then add sausage and brown, looking for crispy edges. Add the onion, bell pepper, and jalapeno, cooking until softened.
-Add in the smoked paprika, cumin, maple syrup, Worcestershire sauce, coffee, and crushed tomatoes. Stir and simmer for 10 minutes to bring the flavours together.
-Fold in the cooked pearled spelt and simmer for an additional 5 minutes. Serve and enjoy.

Come to the farmers' market, pick up fresh vegetables, homemade baking, locally raised meats, fresh eggs, and then walk home with a bag of prairie-grown spelt tucked under your arm.

This week, Sabatier Heritage Foods will have 1 kg bags of pearled spelt available at the Dalhousie Farmers' Market. With its hearty texture and nutty flavour, pearled spelt is perfect for soups, grain bowls, salads, and side dishes.

There's just something wonderfully prairie about bringing home a bag of locally grown grain.

Feijoada is Brazil’s iconic smoky black‑bean stew with explosive flavour. This feijoada riff layers smoky sausage, citrusy broth, and nutty pearled spelt into a pot with every spoonful rich and satisfying.

Spelt-joada
Ingredients:
-1 cup pearled spelt
-1 tbsp oil
-1 small onion, chopped
-3 cloves of garlic
-1 smoked sausage (such as chorizo or kielbasa), sliced
-1 cup of diced ham (smoked preferred)
-2 cans (540ml) of black beans, drained and rinsed
-2 cups of broth
-2 tsp smoked paprika
-1 tsp of cumin
-1 orange, zest and juice
-salt and pepper

Directions:
- Bring 2 cups of water to a boil, add the pearled spelt, reduce to a simmer, and cover for 20 minutes. (If you cook rice, you already know how to cook pearled spelt)
-In a separate pot, heat the oil. Add the onions and sauté until soft, then add the garlic for one minute. Toss in the ham and sausage and cook until lightly browned.
-Stir in the beans, broth, smoked paprika, cumin, and orange. Simmer for 20 minutes until thickened and fragrant.
-Fold in the cooked spelt and let everything simmer together for 5 more minutes so the flavors mingle.

This dish is what happens when coconut rice decides to glow‑up with a heartier grain and a whole lot of personality. Creamy, chewy, and dangerously easy to eat. Top with fruit and shrimp and it is a bowl with tons of flavour.

Ingredients
-1 cup pearled spelt, rinsed
-1 cup full‑fat coconut milk
-1 ½ cups water
-1 tbsp neutral oil
-2 shallots, finely sliced
-1–2 cloves garlic, minced
-½ tsp salt, plus more to taste
-2 tsp maple syrup
-Zest of a lime
-1 small piece of ginger, ground or minced

Instructions
-Heat oil in a large pan over medium-low heat. Add shallot and a pinch of salt. Cook 3–4 minutes until softened. Add garlic and cook for 30 seconds.
-Add the rinsed pearled spelt. Stir for 1–2 minutes until lightly fragrant.
-Pour in coconut milk and water. Add salt, maple syrup, and ginger. Stir well.
-Bring to a light boil, then reduce to low. Cover and cook for 30 minutes, stirring occasionally.
-Stir in lime zest. Taste and adjust salt.

Spring is creeping in, and the herbs are back on the menu.This butternut squash and spelt risotto bridges the seasons with flavours bright enough for the first green shoots outside

Ingredients:
-1 cup of pearled spelt
-2 cups of butternut squash, cut in bite sized pieces
-1 yellow onion, chopped
-2 cloves of garlic, minced
-1 tsp chopped sage
-1 tsp chopped thyme
-½ cup of dry white wine
-4 cups of vegetable broth
-grated parmesan or grana padano to top
-salt and ground pepper to taste

Directions:
-Heat some oil in a large pan over medium heat. Add onions with a pinch of salt and cook for 3 minutes. Add the butternut squash and cook for 7 minutes.
-Add spelt, thyme, sage, and garlic and cook for a minute then add the white wine. Stir and cook until the wine cooks down.
-A cup at a time, add your broth and cook until the broth is absorbed before adding the next cup. Cook until the squash and spelt are tender. Season to taste, grate some parmesan over top, and enjoy.

After a long day, a person sometimes wants a recipe with big flavour, simple steps, and the kind of warmth that sticks with you. This Canadian Spelt twist on Jambalaya is definitely one of those in my rotation.

Ingredients:
-1 cup of SHF Pearled Spelt
-2 cups of chicken broth
-1 lb. of chicken thighs, cut into bite sized pieces
-1 medium yellow onion, diced
-2 celery stalks, chopped
-1 red pepper, chopped
-2 garlic cloves, minced
-1 large can of diced tomatoes
-1 tsp smoked paprika
-1/2 tsp salt
-1/2 tsp black pepper
-1 tsp Cajun seasoning (optional for spice)
-2 tsp Worcestershire sauce

Directions:
-In a small bowl, toss the chicken with your spice blend. Let it sit while you prep the vegetables.
-Heat oil in a large pot over medium heat. Add the chicken and sauté until browned on the outside (it doesn’t need to be fully cooked through). Remove and set aside.
-Add onion, celery, red pepper, and garlic to the pot. Cook 10 minutes until softened and lightly caramelized.
-Add the tomatoes and Worcestershire sauce. Stir well, scraping up any browned bits. Return the chicken to the pot and cook another 10 minutes to meld flavours.
-Stir in the pearled spelt and chicken broth. Bring to a boil, then reduce to a simmer. Cover and cook 20–30 minutes, stirring occasionally, until the spelt is tender. If it starts to look dry before the spelt is done, add a splash more broth. Finally, uncover and simmer for another 5 minutes to reduce.
