Chè Thái
Vietnamese Fruit Cocktail Dessert!
Chè Thai is the refreshing, creamy and full of texture Vietnamese version of a fruit cocktail soup. Coconut meats, tropical chewy jellies, and a variety of canned tropical fruits are soaked in a rich bath of evaporated milk and coconut cream and served chilled over bright red water chestnuts.
Chè Thái is more than a just a sweet soup or fruit cocktail, it's a dessert that's pack in alot of flavor in just one bite. Perfect for summer days! Not only it is delicious, it’s beautifully colorful too!
All of these ingredients are personal preference, you can use whatever fruits and jellies you can find and as much as you would like, some like a bigger half and half ratio than others.
Ingredients:
🍂Evaporated Milk 1 can
🍂Condense Milk 1 can
🍂Coconut Cream or Coconut Milk 1 can
🍂Lychee 1 can
🍂Peach 1 can
🍂Jelly any flavor 1 packet ( cook in 1 cup of water and cut the cubes).
🍂Coconut jelly cubes in syrup
🍂Mango slices 1 can or use fresh mango slices 1 cup
🍂Young coconut string 1 cup or coconut sport Macapuno string in syrup 1 bottle
♦️For Red Rubbies:
🍂Whole water chestnuts 1 can
🍂Red food color few drops
🍂Cornstarch ¼ cup
🍂Ice cubes
🍂water in a bowl
♦️Method:
Cut the chestnuts into 1/4-inch pieces, mix in red food coloring and then coat the pieces with cornstarch. After that, cook the water chestnuts in small batches and then remove when they begin to rise.
Then, immediately place them in an iced water bath immediately. The longer you leave them in the water the chewier they’ll become which is why I keep them for at minimum 10 minutes.
🔸Assembly:
Uncork all canned fruits and slice Lychee, Peach, Mango and jellies.
Put all the fruit in one large container.
In a different container mix Coconut cream, Evaporated milk, Condense milk and coconut milk( It's optional. I have it so I use it). Mix it well and add this mixture to the fruit bowl.Make adjustments to suit your taste.
I like fridging the Che Thai for a few hours prior to serving it so that it's nice and chilled however, you could also add crushed ice if need to serve the dish immediately.
