Pakistani bakery-style Brownies!

Eggs 4
Sugar ¾ cup
Vanilla essence 1 teaspoon
Oil ¾ cup
All purpose flour 1 cup
Baking Powder ½ teaspoon
Baking soda 1 pinch
Cocoa powder 3 tablespoons

Oven temperature 170 °C
Time 30-35 min

Frosting:
Milk ¼ cup
Sugar 2 tablespoons
Cocoa powder 2 tablespoons
*cook well on slow heat for 3-4 min.
Add, Cooking chocolate 150 grams and cook till all the chocolate melts.

*In this video I double the recipe ingredients.

Chè Thái

Vietnamese Fruit Cocktail Dessert!

Chè Thai is the refreshing, creamy and full of texture Vietnamese version of a fruit cocktail soup. Coconut meats, tropical chewy jellies, and a variety of canned tropical fruits are soaked in a rich bath of evaporated milk and coconut cream and served chilled over bright red water chestnuts.
Chè Thái is more than a just a sweet soup or fruit cocktail, it's a dessert that's pack in alot of flavor in just one bite. Perfect for summer days! Not only it is delicious, it’s beautifully colorful too!

All of these ingredients are personal preference, you can use whatever fruits and jellies you can find and as much as you would like, some like a bigger half and half ratio than others.

Ingredients:

🍂Evaporated Milk 1 can
🍂Condense Milk 1 can
🍂Coconut Cream or Coconut Milk 1 can
🍂Lychee 1 can
🍂Peach 1 can
🍂Jelly any flavor 1 packet ( cook in 1 cup of water and cut the cubes).
🍂Coconut jelly cubes in syrup
🍂Mango slices 1 can or use fresh mango slices 1 cup
🍂Young coconut string 1 cup or coconut sport Macapuno string in syrup 1 bottle

♦️For Red Rubbies:

🍂Whole water chestnuts 1 can
🍂Red food color few drops
🍂Cornstarch ¼ cup
🍂Ice cubes
🍂water in a bowl

♦️Method:
Cut the chestnuts into 1/4-inch pieces, mix in red food coloring and then coat the pieces with cornstarch. After that, cook the water chestnuts in small batches and then remove when they begin to rise.
Then, immediately place them in an iced water bath immediately. The longer you leave them in the water the chewier they’ll become which is why I keep them for at minimum 10 minutes.

🔸Assembly:
Uncork all canned fruits and slice Lychee, Peach, Mango and jellies.
Put all the fruit in one large container.
In a different container mix Coconut cream, Evaporated milk, Condense milk and coconut milk( It's optional. I have it so I use it). Mix it well and add this mixture to the fruit bowl.Make adjustments to suit your taste.
I like fridging the Che Thai for a few hours prior to serving it so that it's nice and chilled however, you could also add crushed ice if need to serve the dish immediately.

🍑Peachy-Misu🍑

Want a light and soft tasty dessert! Then you must try the Peachy-Misu.
Peach'Misu made with Italian sponge fingers and is similar to tiramisu in its assembly. Sandwiched in between the peachy soaked sponge fingers, mixed fruits, secret cream filling and peaches.
It's cold not too sweet and simply refreshing.
Easy, fresh and a little break from all the 🍫 chocolate....

Ingredients:

🍑1½ pack sponge fingers 600 gms.
🍑1½ can sliced peaches in juice 100 ml.
🍑1 tub Mascarpone 475 gms.
🍑½ can condensed milk. ( adjust sweetness according to your taste)
🍑1 Orange Jelly packet.
🍑2½ cups whipping cream.
🍑2 tablespoons icing sugar.
🍑1 tablespoon vanilla extract.

Instructions:

First whip your cream with icing sugar and vanilla essence. Add the mascarpone and condensed milk and whip gently, careful not to over whip. It should be soft and fluffy and still holding some shape. Keep it aside.

Drain your juices and reserve both juices in one bowl.

Slice your peaches into thinner slices.

Soak the sponge fingers in the peachy syrup.

Put the soaked sponge fingers on a single layer in a serving dish. Spread the cream mix and mix fruit cocktail on top. Put a second layer of soaked sponge fingers and finish with a layer of cream mix, sliced peaches and orange jelly. Make 2 layers.
Chill until ready to serve.

Refrigerate overnights for better results.

Biscoff Orange Mousse!

Ah, tis the season of CITRUS and LOVE!
If you are looking for an exotic, fluffy and light fruit dessert, here is the Biscoff Orange Mousse recipe.

This easy to make dessert is very delicious in taste also. It looks so elegant, and the velvety, airy texture, with a subtle hint of tangy orange.

An ideal dessert to end a hearty family meal on a nice tangy note.

✅ Ingredients:

🍊Lotus Biscoff Biscuits crushed 1½ cups. ( or any caramelized biscuits)
🍊Melted Butter 4 tablespoons.
🍊Whipping Cream 1½ cups.
🍊Condensed Milk ¼ cup.( or according to your taste)
🍊Evaporated Milk ½ cup.
🍊Orange Jelly Crystals 1 packet
🍊Mandarin Orange Segments 1 cup.
🍊Orange Juice ½ cup

✅ Method

🍊Make crumbs of Lotus biscuits in chopper. Add soft butter in chopper and mix again.
🍊Make a layer of crushed biscuits on serving dish or individual dessert glasses. Then put in refrigerator for 15-20 minutes.
🍊In a separate bowl beat the chilled whipping cream till soft peaks are formed then add condensed milk,evaporated milk and orange jelly crystals. Whisk until all the jelly crystals are dissolved and there won't be any jelly crystals.
🍊Fold in the mashed oranges ½ cup into the mixture.
🍊Pour some orange juice on the layered biscuits then put some orange segments on top of crushed biscuit layer.
🍊Pour cream mixture on top of crushed biscuits and orange layer.
🍊Decorate the top with some more orange segments and biscuit crumbs.
🍊Place in refrigerator and serve chilled.

🔸This will make 6-8 servings.
