Things are getting busy around Fungi Fresh Acres 🌿💛

Over the last little while we’ve been baking, growing mushrooms, welcoming new bees to the farm, and getting ready for our next Farmstand Social!

One of the things we’re especially excited to share is this vegan & gluten free birthday cake we recently made for a friend’s family celebration. The response completely warmed our hearts 🥹

What meant the most wasn’t just that everyone enjoyed it—it was hearing that people genuinely couldn’t believe it was both vegan and gluten free. There’s something really special about creating food that doesn’t feel like a compromise, and hearing people rave about it long after the celebration reminds us why we love doing what we do!

Because of that, we’ll have some vegan & gluten free options available at our upcoming farmstand, along with a variety of homemade baking and canned goodies 🌿

A few things you’ll find at the event:
🍄 Homemade mushroom hand pies featuring our own oyster mushrooms, wrapped in rolled pastry with thyme, smoked paprika, onion & garlic filling
🍪 Fresh baked treats
🍯 Jams, pickles, salsa & infused honey
🐝 Bee-based skincare products (including a new lip balm inspired by our Moose momma and baby, Moose Smooch!)
🍄 Fresh oyster mushrooms & lion’s mane
🧵 Handmade market bags & aprons

We’re also excited to have our friend Brett from Keidun Hobbyist joining us for the day with additional mushroom offerings, helping us bring even more fungi goodness to the farmstand 🍄

We’re also planning a little kids activity area with mini concrete mushrooms for painting & decorating 🍄🎨

Happy 10th birthday to Kingsley! 👑

We had the absolute joy of creating this custom birthday set for him — complete with a mini banana + pumpkin cake, pupcakes for his crew, and handmade biscuits (including naturally coloured beet treats).

Every new bake requires a taste test…
Carlos (our very serious in-house quality control) was more than happy to step in 🐶

And from the looks of things…

Everything made with simple, dog-safe ingredients (and no peanuts!)

Okay, gentle reminder that we don’t just bake “once in a while”… we *bake bake* 👀

This beauty here is a lemon curd & blueberry coconut cake with a little mountainscape moment—and yes, we do custom cakes too (starting at $6 per serving).

If you’ve got a party, brunch, birthday, or “I just want good cake” situation coming up… send us a message ahead of time so we can plan something delicious for you (or maybe a pet?! Don't get us started on pup cakes🐶)🤍

Also, while we’re here—some of the regulars that keep quietly flying off the shelves:

✨ Vanilice (Serbian walnut jam cookies) – $18/dozen
(Jam is customizable, and yes… vegan & gluten-free options available. We’ve taste-tested side by side and couldn’t tell the difference 👀)

✨ Shortbread bars (apple, raspberry, blueberry) – $15 / 6-pack

✨ Cinnamon buns (always a favourite)

✨ Scones – savoury (oyster mushroom, cheddar & green onion) or sweet

We usually have a turnaround time of 5 days or less, depending on the week—so if you’re thinking about ordering, don’t wait too long!

Proof that most of our baking happens after bedtime 👇
If you’ve ever wondered how Fungi Fresh Acres actually runs… here’s your behind-the-scenes 👀
Short answer: it’s a team effort.
Long answer:
Between full and part time jobs, raising two busy boys, tending chickens, growing mushrooms, baking, and everything in between… we’ve had to accept that we are not superhuman 😅
Right now, our weeks look a bit like this:
🟢 Mondays & Fridays → full baking mode
🟢 Tuesday–Thursday → nurse life
🟢 Evenings → baking, prepping, or trying to stay one step ahead of the chaos
Most orders come together between Friday and Monday… or after bedtime, when the house finally goes quiet and we can actually hear ourselves think again.
Behind the scenes, it really is both of us:
One of us in the kitchen, the other tending mushrooms, feeding chickens, or keeping everything else moving so this whole thing works.
And while our kids love to help… we do keep a strict “no tiny assistants during business baking” rule.
Because as much as they enjoy it, we’re pretty sure no one wants their cookies coming with a surprise sprinkle of mystery crumbs… or worse 😅
So we keep your orders clean, intentional, and made in the quieter moments—usually after bedtime, powered by coffee and a bit of stubbornness.
This little farm and business is built in the in-between:
after work, after bedtime, and in the margins of a very full life.
It’s not perfect, but it’s real—and we’re really grateful you’re here for it 🤍

About 10 years ago I tried making pie.

It didn’t fail… but it definitely wasn’t up to my usual baking standards. So I decided something very reasonable for a baker to decide:

“I guess I just don’t make pie.”

And for the next decade I happily told people:You’ll never get a pie from me.

Fast forward to last Thanksgiving. We had beautiful sugar pie pumpkins from the garden and I decided to make a pumpkin pie for family dinner… except I made it with puff pastry because I was still avoiding actual pie dough. 😅

The pie was great. The Yorkshire puddings I made alongside dinner? Perfect. If you’ve ever made Yorkshire puddings, you know how technical those are — hot fat, dramatic rise, and that glorious gravy crater in the middle. I can nail those no problem.

Then Dustin’s 80+ year old grandma heard me say I “don’t make pie.”

She laughed.

Unfortunately that woke up my Serbian inat — that stubborn little voice that says “oh yeah? watch me.”

So I kept at it and figured out pie dough.

Fast forward to today — March 14. Pie Day.

Turns out I can make pie after all. I got myself into a pie promise I intend to keep - delivering pie on Pie Day!

Do I enjoy making pie? Still undecided. 😅

But the apples are peeled, the dough is rolled, and the house smells amazing.

Feeling extra grateful around here this week 💛

A big thank you to the wonderful family who trusted us with their little one’s first birthday cake. Happy 1st birthday Ian! Being part of such a special celebration is honestly such a joy, and the sweet feedback and photos we got afterward absolutely made our week 🎂How cute is that teddy 🧸 cake?!

Just a little reminder that we do take celebration cake orders, starting at about $6 per serving, depending on the design and details.

Meanwhile… once the kitchen momentum starts around here, it tends to snowball a little. One cake somehow turned into a small batch of Kiwi Strawberry Jam 🥝🍓

It’s bright, fruity, a little tangy, and tastes like summer decided to show up early (well not really but we're trying!!!)

Send us a message if you’d like to claim a jar before they mysteriously disappear. (We’ve seen it happen before… very suspicious.)

Halved cups to keep the entrance clear of snow so the ladies can leave and do their winter cleansing flights when they need to! Winter beekeeping things - can you hear them buzzing and humming to maintain those temperatures inside the polystyrene hives?! -18 C at the time of the video.
