Potatoes, cauliflower, tomatoes, onions, green peas, capsicum, carrots, green chilies, butter, ginger-garlic paste, Pav Bhaji masala, turmeric, red chili powder, salt, coriander, and pav buns.

Method

1. Chop all the vegetables and pressure cook them with peas until soft.
2. Mash the cooked vegetables well.
3. In the same pot, add butter, ginger-garlic paste, onions, tomatoes, Pav Bhaji masala, turmeric, red chili powder, and salt. Cook until the masala thickens.
4. Mix in the mashed vegetables and simmer for 10–15 minutes, adding water as needed. Finish with butter and fresh coriander.
5. Toast the pav buns in butter until golden.
6. Serve hot with butter, chopped onions, fresh coriander, and a lemon wedge.

Ingredients:

* 4 small eggplants (baingan)
* 4 tomatoes
* 2–3 green chilies
* 1 red onion, finely chopped
* 2 spring onions, chopped
* 2 tbsp chopped ginger
* 2 tbsp oil
* 1 tsp cumin seeds
* 1 tsp coriander powder
* ½ tsp turmeric
* 1 tsp red chili powder
* Salt to taste
* Fresh coriander for garnish

Method:

1. Roast the eggplants, tomatoes, and green chilies until soft and slightly charred. Peel the eggplants and tomatoes, then mash together.
2. Heat oil in a pan and add cumin seeds. Sauté the chopped onion, spring onions, and ginger until fragrant.
3. Add coriander powder, turmeric, red chili powder, and salt. Cook for 1 minute.
4. Mix in the roasted eggplant, tomatoes, and green chilies. Cook for 8–10 minutes, stirring occasionally, until everything is well combined.
5. Garnish with fresh coriander and serve hot with roti, naan, or paratha.

Ingredients:
Boiled potatoes, bell peppers (Shimla Mirch), onion, tomato, ginger, garlic, green chili, cumin seeds, turmeric, red chili powder, coriander powder, garam masala, kasuri methi, salt, oil, and fresh coriander.

Method:

1. Heat 2 tbsp oil and add 1 tsp cumin seeds.
2. Sauté chopped ginger, garlic, and green chili for 1 minute.
3. Add onions and cook until golden. Stir in tomatoes and cook until soft.
4. Add turmeric, coriander powder, red chili powder, and salt. Mix well.
5. Add bell peppers and cook for 2–3 minutes.
6. Add boiled potatoes, garam masala, and kasuri methi. Toss gently and cook for 5 minutes.

Ingredients:

* 2 cups soaked urad dal (overnight)
* 1 tsp ginger
* 1–2 green chilies
* Salt to taste
* Oil for frying
* 3 cups thick yogurt (whisked)
* 2–3 tbsp sugar (optional)
* Salt & roasted cumin powder
* Tamarind chutney
* Chaat masala
* Red chili powder
* Chopped cashews & raisins (for garnish)

Method:

1. Grind the soaked urad dal with ginger, green chilies, and salt into a smooth, fluffy batter.
2. Deep-fry small portions until golden brown.
3. Soak the fried bhallas in warm water for 15–20 minutes, then gently squeeze out the excess water.
4. Mix yogurt with salt, sugar (if using), and roasted cumin powder.
5. Arrange the bhallas in a serving bowl and pour the chilled yogurt over them.
6. Drizzle tamarind chutney, sprinkle chaat masala, roasted cumin powder, and red chili powder.
7. Garnish with chopped cashews and raisins. Chill for 30 minutes before serving.

* 6–8 karela (bitter gourd)
* 1 onion (finely chopped)
* 2–3 tbsp mustard oil
* 1 tsp turmeric
* 1 tsp red chili powder
* 1–2 tsp coriander powder
* 1 tsp fennel (saunf) powder
* 1 tsp amchur (dry mango powder)
* Salt to taste

Steps:

1. Wash and peel karela lightly, slit them lengthwise, and remove seeds. Rub with salt and keep for 20–30 mins, then rinse (to reduce bitterness).
2. Heat oil, sauté onions until golden. Add all spices and cook for 2–3 minutes.
3. Stuff this masala into the karela and tie with thread (optional).
4. Heat some oil in a pan (like in your picture), place stuffed karela, cover, and cook on low flame.
5. Turn occasionally until they are soft and nicely browned from all sides.
