TinyTiffinTale :

* 6–8 karela (bitter gourd)
* 1 onion (finely chopped)
* 2–3 tbsp mustard oil
* 1 tsp turmeric
* 1 tsp red chili powder
* 1–2 tsp coriander powder
* 1 tsp fennel (saunf) powder
* 1 tsp amchur (dry mango powder)
* Salt to taste

Steps:

1. Wash and peel karela lightly, slit them lengthwise, and remove seeds. Rub with salt and keep for 20–30 mins, then rinse (to reduce bitterness).
2. Heat oil, sauté onions until golden. Add all spices and cook for 2–3 minutes.
3. Stuff this masala into the karela and tie with thread (optional).
4. Heat some oil in a pan (like in your picture), place stuffed karela, cover, and cook on low flame.
5. Turn occasionally until they are soft and nicely browned from all sides.

TinyTiffinTale recipe 1. Heat oil + butter in a pan.
2. Sauté chopped onions till light brown, add ginger-garlic paste.
3. Add tomato purée, salt, turmeric, red chili powder, coriander powder, and garam masala; cook till oil separates.
4. Add green peas and a little water; cook 5–7 minutes.
5. Add paneer cubes and simmer 5 minutes.
6. Finish with kasuri methi and cream

TinyTiffinTale (Kidney Bean Curry)
1. Soak & boil: Soak rajma overnight. Pressure cook with water, salt, bay leaf and cinnamon stick till soft.
2. Masala: Heat oil/ghee. Add onion paste and cook till golden. Add ginger-garlic paste.
3. Spices: Add salt, red chilli powder, turmeric, coriander powder, cumin powder and a little garam masala. Cook till oil separates.
4. Tomato base: Add tomato puree and cook well till thick and shiny.
5. Combine: Add boiled rajma with some stock. Simmer 15–20 mins till gravy thickens.
6. Finish: Sprinkle crushed kasuri methi/garam masala, adjust salt.

Serve hot with steamed rice or roti 😋

1. Wash & cook dal: Rinse red masoor dal. Cook with water, salt, and a pinch of turmeric until soft.
2. Prepare tadka: Heat oil/ghee. Add chopped onion, sauté till light golden. Add chopped tomato and cook till mushy.
3. Add paste & spices: Add ginger-garlic paste, red chili powder, coriander powder, and a little garam masala. Cook till oil separates.
4. Combine: Add cooked dal, adjust water, and simmer 5–7 minutes.
5. Finish: Crush kasuri methi on top, mix, and turn off heat.

Short Chole (Chickpea Curry) Recipe 🍛
1. Boil chole: Soak chickpeas overnight, then pressure-cook with water, salt, bay leaf, tea bag (optional) until soft.
2. Make gravy: Heat oil, add cumin seeds, chopped onion, ginger-garlic paste. Sauté till golden. Add tomato puree, turmeric, red chili powder, coriander powder, chole masala; cook till oil separates.
3. Combine: Add boiled chole with some cooking water. Simmer 10–15 minutes till thick.
4. Tadka (as shown): Heat ghee/oil, fry sliced garlic, ginger juliennes, green chilies till light brown. Pour over chole.
5. Finish: Garnish with fresh coriander and a squeeze of lemon.
