Starting Today
Actually, it began two days ago, keeping the blender out , and making that personal commitment to do things differently, and better.
The leftover organic Whey from cheesemaking makes for a good base liquid for morning Smoothies.
I want the day to start more smoothly; to ease in with Water, the morning stretches and meditation, herbal tea and the Smoothie for breakfast.
And , of course there are no limits to what you can combine
I’m not giving up coffee. In fact, I’ll be having the coffee version tomorrow morning, with the whey liquid base, some probiotic yogurt,frozen banana, hinted vanilla and topped with frothed milk.
I use MACA, lion’s mane powder, full spectrum Amino acid, magnesium and a few tinctures for my personal wellness supplements. It’s an easy discipline to take then this way, which means establishing the habit.
Next up will be the frozen pumpkin purée’ from the 2025 harvest, some cinnamon, clove, nutmeg and vanilla..
I intend to Post more of these versions, but with the ingredients and nutritional values to consider for your upcoming Smoothie.

Habits for Change.
That sounds counterintuitive, but it really is a commitment to bring something new into the routine, at least habitually for a whole week so that it can take root for creating change.
How many times do we stray into ‘just a taste’ of something that turns to one more bite, another small forkful, and hijacks the good intention?
Honouring is a big part of this, of honouring our purposeful intention, honouring our self worth, and ultimately aspects of our health.
So, I pull out the blender, use the leftover whey from cheese making and .a bit of herbal tea as the base liquid. Those frozen bananas on the back of the freezer are now on call, the fresh picked blackberries and seasonal blue grapes which are nutrient rich are adding more than just colour, as well as organic homemade yogurt.
Vitamins and supplements are easier to take in a smoothie, making the discipline easier.
Each morning is now a new possibility for flavour.
Spiced pumpkin comes to mind, and I’ve still got plenty of puréed pumpkin in the freezer from last year’s harvest. This is how it begins, and brings excitement and momentum to the intention in

Vibrant as a flavour.
Think about it for a moment, and what vibrancy means to you and your palate.
For me, all these ingredients have to happen together to create the vibrancy of this dressing.
I tweak as I go;a hint more minced ginger or the miso umami qualities intoning the whole, an extra dash of black pepper and toasted sesame oil. These are the key players for me, and yet, the carrot and red onion are essential too. All matter.

A good litre of dressing doesn’t last long, and is the encouragement for more salads, especially with crisp lettuce, cucumbers and radish.
A dipper or accompaniment for tofu, gyoza , cooked shrimp and crab, rice or cold Asian noodles with a hint of added soy? That too!
It even edges it way to my beloved ricotta cheese; the open faced sourdough slice with ricotta, avocado and arugula.

No Competition.
The many elements come together: fresh handmade egg Tagliolini pasta, fresh Ontario Peas ( all parts used), Hinted Scspe Pesto, hinted grated garlic, Bechamel Sauce, Pea pod reduction, Lupa Sheep milk cheese, hinted blue cheese, fresh basil, fresh black pepper & butter fried Clapp pear.
It all works well together, really well, with a succulence and subtlety.
While peas are still in season, a bit of time for shelling them is time we’ll spent. The pods are blanched, puréed with a bit of water, strained and reduced.
That’s actually what makes the sauce so Peasy, colourful, blending well with béchamel and hint foamy pasta water.
If a protein had entered this picture, lightly grilled shrimp would have been a perfect and harmonious match.
Pasta can be so exquisite. There are so many ways to keep elevating it, which is my lovely and happy job to do in

An ‘Oh Yes’, hoped so, thought so, figured it could work, but never thought this would be my
new ‘Go-To’ Focaccia.
This was planned as a thinner version, and employing the scape pesto on hand, added EVOO, and then the White Miso paste (Shiromiso) with salty and sweet, umami richness to make it special.
Imagine wild blackberries dotting the surface, and actually subtle but with a bit of crunch with the tiny seeds.
A Taglio? Tagliatelle means ‘to cut’ in Italian.
As Focaccia is done in a sheet pan, take the scissors and cut your portion or slice, so to speak.
Miso is a staple in , and it turns up in soups, sauces, dressing- and now bringing focaccia to a whole new level.

Just Layed.
It used to be a private joke, but true because of how fresh they are, and a short bike ride away at my neighbours Coop.
Cute, this bunch of ladies that let me take a few photos before going back inside to their daily activities, part of which resulted in eggs for this morning’s breakfast.
Real food, great flavour, and mounded whites that indicate incredible freshness.
We are trying to really connect with, support and share resources with very local community.
Community is more than geography, or bumping into someone at the mailbox.
We had a garage sale recently, and met some incredible people, had interesting and insightful conversations, and realized how many great neighbours we have and hope to know better.
So , where to begin?
Take time, stay open to possibilities, share and support, and find creative endeavours to bring people into connection, conversation and ultimately, a bit of magic.
Thank you Bill and the fine ladies who made the eggs.
On the horizon, we hope to be helping to make maple syrup next year; helping hands, teaching and learning, creating that sweetness of community together.

The Steps of Change.
All the preparation in the kitchen to produce something has so many stages; every step of it teaching something, contributing to the whole, sharpening skills and dexterity, and bringing observations with curiosity, amusement and joy. That’s part of my story in the kitchen, with more of a life philosophy being expressed and continually evolving, much like a recipe.
So, versions are continually happening, keeping this participation fluid, interesting, and not attached to a particular outcome. The ‘Come What May’ expression has some underpinnings, intentions and hopes baked into it, but ultimately will teach me whatever is meant for me to learn through the journey.
Dessert last night was the final stage, shared with the best of friends, which is where savouring begins.
Everything is connected no matter what we are doing, and the ‘How’ of entering in, participating and finding meaning is a most important ingredient.
There’s something to munch on, in and kitchen and life philosophy.

The Golden Bell.
This version I brings in the flavours and compatible, integrated textures of Basmati Rice and Thsi Coconut Sticky Rice.
Chop a couple of onions, finely, some yellow pepper and a diced yellow zucchini. Some garlic, paprika and thyme are the key, added flavour. Lightly fry in a pan with some olive oil, until tender.
Make the Bechamel Sauce. Mix theUse just enough to hold it together and for enough creaminess when cooked.
Rice, vegetables and bechamel combine to become the stuffing.
Wash the yellow peppers, cut them in half. Prepare a parchment line baking sheet, and stuff with filling. Spread a thin layer of bechamel on top, and lightly press some breadcrumbs or Pablo on top. Brush with melted butter or spray with a bit of cooking oil.
Bake 400F for 15 minutes, then drop the heat to 375 F for 30 + minutes.
When tender, puffed and done, then can be browns more under the broiler for 3-4 minutes.

Cuttings of Sage.
Dry them, Grind some, keep other whole until needed, consider a stash for smudging.
I’m thinking of sage oil and a sage salt so that its incredible flavour comes through in different ways.
A bouquet of it sits in the kitchen, ready for whatever inspirations come through over the weekend.
