No-Oats Breakfast Pudding

Time: 6h 5m
Servings: 1

2 tbsp chia seeds
1 tbsp h**p hearts
1 scoop vanilla protein powder
1 cup unsweetened almond milk
1/4 tsp vanilla extract
1 pinch salt

1. In a jar or bowl, combine the chia seeds, h**p hearts, and vanilla protein powder.

2. Pour in the almond milk and add the vanilla extract and salt.

3. Stir or shake the mixture thoroughly until the protein powder is fully dissolved and no clumps remain.

4. Cover the container and place it in the refrigerator for at least 6 hours or overnight to allow the seeds to expand and the pudding to thicken.

5. Stir once more before serving, adding a splash more almond milk if a thinner consistency is desired.

Here are one of the high-protein snack recipes specifically designed to match my coffee theme. They integrate the core LG products—LiveGood Organic Coffee, PEAK Functional Coffee Enhancer, and LiveGood Collagen Peptides—into delicious, no-bake, high-protein bites and bars.

Recipe is in the poster. This is one of many recipes I will include in my Katharine's Vibrant Vitality Mini CookBook coming soon.

Sometimes the simplest things are the best things. 🍅

Cheesy Tomato and Basil Garlic Toast — crispy sourdough brushed with garlic oil, melty mozzarella, ripe tomatoes, and fresh basil scattered on at the end.

Ten minutes of prep and the oven does the rest. Perfect for a light lunch, an afternoon snack, or next to a bowl of soup.

Two little tricks: pat the tomatoes dry so the bread stays crisp, and add the basil after baking so it stays bright and fresh.

Small Batch Stovetop Applesauce

Time: 30m
Servings: 4

4 medium Gala apples (peeled, cored, and chopped)
1/2 cup water (use up to 3/4 cup for desired consistency)
1 tablespoon white sugar
1/4 teaspoon ground cinnamon (optional)
1 teaspoon lemon juice (optional)

1. Peel the apples if you prefer a smooth texture, or leave the skins on for extra fiber and color, then core and dice them into chunks.

2. Place the apple chunks, water, and lemon juice into a small saucepan. Stir in the sugar and cinnamon.

3. Cover the pot with a lid and cook over medium-low heat for about 15 to 20 minutes, stirring occasionally, until the apples are very soft.

4. Remove the pot from the heat. Use a potato masher for a chunky style, or an immersion blender or food processor if you want it smooth.

Note: for the Benefits of the Aminos from LiveGood, add a scoop after taking the apple sauce off the stove.

Also add mapple syrup instead of sugars… adding the maple syrup and cinnamon after taking sauce off heat.

# # # *1. Zero-Carb Protein Pancakes – Fluffy Version*
_Makes 2-3 small pancakes | *Net carbs*: ∼2g total_

*You need*:
- 2 large eggs
- 1 scoop LiveGood Vanilla Protein
- 1/2 tsp baking powder
- Pinch salt
- 1 Tbsp melted butter or coconut oil, optional for richer taste
- 1/4 tsp cinnamon, optional

*How*:
1. Whisk eggs first until frothy. That’s the secret to fluffy.
2. Stir in protein, baking powder, salt, and butter until smooth. Batter looks thin — that’s right.
3. Heat non-stick pan on med-low. Grease lightly.
4. Pour small 3-inch rounds. Cook until edges set + bubbles pop, about 2 min. Flip gently. Cook 1 min more.
5. Serve with butter, 5 raspberries, or sugar-free syrup.

*Why med-low heat*: Protein burns fast. Low + slow = golden, not scorched.
