Spice up dinner with this Spicy Sheet Pan Quesadilla! 🌶️🧀 Loaded with chicken, corn, black beans, jalapeño, and Bothwell Habanero & Cracked Black Pepper Monterey Jack, it’s baked to golden, melty perfection. Drizzle with hot honey, serve with salsa and sour cream, and dig in!

Recipe:

Serves: 6 | Prep Time: 15–20 min | Cook Time: 20 min

Ingredients
5 large (12-inch) flour tortillas
150 g frozen corn
150 g canned black beans, drained and rinsed
300 g shredded rotisserie chicken
340 g Bothwell Habanero & Cracked Black Pepper Monterey Jack, shredded (reserve 75 g for topping)
½ tsp paprika
½ tsp garlic powder
Sliced jalapeño (seeded)
Hot honey, for drizzling
Gay Lea Sour Cream, for dipping
Salsa, for serving
Cilantro, for garnish

Directions
Preheat oven to 400°F (204°C).
In a bowl, mix chicken, corn, black beans, paprika, and garlic powder.
Line a 13"x18" sheet pan with 4 tortillas, overlapping to cover the base and letting edges hang over.
Spread filling evenly and top with 265 g cheese.
Place the 5th tortilla in the centre and fold edges over to cover.
Top with jalapeño slices and remaining cheese.
Bake 12 minutes until golden and bubbly.
Rest 3–5 minutes, then slice into squares.
Drizzle with hot honey and serve with salsa and sour cream.
Garnish with cilantro and enjoy!
