Granola isn't just for breakfast!! Today I made a rhubarb crisp with a yummy granola topping. I served mine with vegan chai ice cream from . Try it for yourself and let us know what you think!
Rhubarb Granola Crisp
For the filling:
3 cups rhubarb (or other fruit)
1/3 cup sugar (or to taste)
For the topping:
1/4 cup brown sugar
1/4 cup flour
1 tsp cinnamon
2 cups granola
1/4 cup butter (room temperature)
Instructions
1) Preheat the oven to 350°F (175°C).
2) In a bowl, combine the brown sugar, flour, and cinnamon.
3) Add the butter at room temperature and mix until the butter is fully incorporated.
4) Add the granola and thoroughly combine.
5) Chop the rhubarb and add to a baking dish. Sprinkle the sugar over top and mix.
6) Spoon the topping mixture over top of the fruit.
7) Bake for 30-40 minutes or until the fruit is fully cooked. Test by inserting a fork.
8) Serve with custard or ice cream.
