Wrapped up in the valley. -.I am very Excited to be preparing Rosemary grilled beef tenderloin with Cab/ Syrah Bean Ragout, Mini Yorkie puddings and horseradish Jus. Here's an easy recipe from our Small Talk Vineyards Cooking Class. Visit our website (in bio) For more information. Next class March 7 2015.

These skewers are fast and simple and will leave your guests wanting more.
Caprese Skewers

Ingredients
Skewer
12 3 inch wood skewers
24 cherry or grape tomatoes
12 mini bocconcini balls

Balsamic drizzle
1 1/2 cups Balsamic Vinegar

Basil Drizzle
1 bunch fresh basil
1 1/4 cups vegetable oil
Pinch of Kosher salt

Instructions
Skewer each with 1 cherry tomato 1 mini bocconcini ball and 1 final cherry tomato. Set aside

Balsamic
In a medium saucepot on medium high heat bring 1 and a half cups of balsamic vinegar to a boil and simmer.
Reduce by 3/4 or until thickened
Allow to cool
(Optional) Pour into a squeeze bottle for easy application.
Basil drizzle
Place all basil drizzle ingredients in a blender and puree until smooth and bright green.
(Optional) Pour into a squeeze bottle for easy application

Plating
Place skewers overlapping each other to give height. drizzle over with both basil and balsamic.
Makes 12

Beef Vegetable Rolls with Teriyaki
Preheat oven to 400 degrees.

Ingredients
Filing
1 large carrot
1 celery stalk
1 red pepper
1 yellow pepper
2 table spoons rice wine vinegar
1 garlic clove, minced
Siracha Chili sauce
1/4 cup teriyaki sauce

Beef
12 to 14 ounce beef tenderloin centre cut sliced into 1 inch cross cuts.
Kosher salt
Fresh cracked pepper

Garnish
Sesame seeds
1/4 cup teriyaki sauce

Prepare Filling
Julienne into thin strips
Place into mixing bowl
Add rice wine vinegar,garlic, 6 drops siracha sauce and 1/4 cup teriyaki
Stir mixture until well mixed.
Let marinade half hour to 45 minutes

Prepare beef
Flatten beef with a meat hammer or something improvised.

Separate filling mixture into 12 equal portions. Wrap each portion in 1 beef cut.

Place each roll on parchment lined baking sheet and season with kosher salt and fresh cracked pepper place into oven for 8 to 10 minutes on middle rack.

Remove and top with teriyaki and a sprinkle of sesame seeds. Serve immediately
