Some of what I ate on vacation

1-2 - from the Mexican restaurant
3 - breakfast day 1. Steamed vegetables (cauliflower and carrots), smoked salmon, pineapple, plantain, and tomato chicken
4 - dinner. Potato wedges, steamed green beans and peas, two types of fish, and steamed broccoli
5 - breakfast. grilled tomatoes, smoked salmon, sautéed cabbage, potatoes, and chicken
6 - lunch. Hamburger patty, steamed veggies (zucchini and carrots), baked potatoes, another tomato chicken stew, and cucumber and pineapple salad
7 - dinner. Prosciutto (freshly cut), chicken, tomato chicken, steamed veggies (cauliflower and broccoli), ribs
8 - breakfast. Smoked salmon, roasted tomatoes, peas, and plantain
9 - lunch. Hamburger patty, steamed veggies (zucchini and cauliflower), potato wedges, beef stew
10 - dinner. Hamburger patty, shaved beets, mushrooms, carrots, tomatoes, ribs
11-12 - also from the Mexican restaurant. Tacos and soup with toasted grasshoppers.
13-15 - from the Argentinian restaurant. 3 types of sausages, empanadas, grilled salmon with potatoes
16 - last breakfast (started to feel better). Banana, smoked salmon, and a roasted potato

About Me...

My name is Rebecca and I have a confession: I’m totally obsessed with food. I constantly daydream about new recipes. I grew up in the beautiful city of Montreal, Canada; but now live in the Nation's Capital with my 13 year old rescue Chihuahua named Klick. I have my bachelor's in psychology and I hold a Graduate Diploma in Human Resources. I recently passed my exam to become a Certified Human Resources Professional, and have a full time job - However, I have always loved food and getting the chance to express my creative side in the kitchen.

I grew up having the pretty standard love/hate relationship with veggies. Through a combination of food restrictions and the internet, I've learned how to enjoy green things such as kale and squash, to the point where I've actually been seen devouring a whole bowl of them while standing in my kitchen with the fridge open.

*Gasp* What happened to me?

That being said; I have several food restrictions which make getting creative in the kitchen a necessity. I'm allergic to dairy (whey/casein) and I can't digest certain grains properly (wheat, barley, quinoa, rye). Dealing with these restrictions was very hard at first, because they're present in most of what we consider to be in our "standard diet." So I had to say bye-bye to mac n cheese, ice cream, cookies.. etc.. or so I thought.
