No Fold Blanket Dumplings

I have been seeing a lot of the viral dumpling lasagna and these no fold versions. They definitely got me wanting to try them. These will definitely be made again, the pork gets nice and brown with a crisp afterwards 👨‍🍳😗

I am almost halfway across Newfoundland (400km down, 7076km to go or 4396mi)

My goal this year is to raise $2000 to fight children's cancer. Last year I made it to $1800 for this fantastic cause. Although I won't be doing any 70km bikes around town and our trails due to a long rehab for my shoulder, I will be chipping away at this lofty goal on my upright stationary bike.

Cross Canada Ride to Fight Children's Cancer

I plan on biking across Canada (7324km or before December 31st, 2026 to raise funds to fight Children's Cancer for

The challenge is normally in August but since my 2026 will look different than normal I figured let's start right now, or at least when I'm feeling good. Almost all of my biking will take place on my upright bike indoors as I recover from my shoulder surgery.

I'll do check-ins every few days or so and keep my links on my profile.

Smokey, Saucey and Spicy Ribs

Back ribs with a binder and seasoned with Smoke Dat Butt. Finished with some smokehouse BBQ sauce and paired with my friends and .26 Ottawa Wheat 26 Raspberry Wheat which raises funds for cancer screening initiatives through the Foundation.

Trulocal Beef and Lamb Gyro Meatballs

These meatballs turned out so good using Ground Beef 80/20 with organ meat and ground lamb. The homemade cart white sauce (garlic sauce) and donair sauce added to that authentic taste with a low carb touch.

Smoked, beer braised and shredded chicken wing grilled cheese alongside some homemade roasted tomato soup.

Game day doesn't have to be traditional so why not try something new.

It's week 1 and I wanted to use all our harvested garden tomatoes before they go bad. I grilled the tomatoes, red peppers and garlic and along with a few other ingredients and the soup came out perfectly. Tomato soup needs a good sidekick and a Five O'clock Shadow beer braised chicken wing grilled cheese was just that (that's a mouth full just like the sandwich).

Flank Steak Tacos and Taco Salad

Marinated overnight with taco seasoning and then finished with Blanco. Seared hot, sliced thin and added to some tacos and taco salad with homemade garden salsa.
