It is with mixed emotions that we killed the remaining 4 pigs yesterday. We loved having pigs. They mind their own business but are always curious when you come around. I think we are still looking to experiment with breeds that fit our needs, but over all these Tamworth Berkshire cross were friendly and turned the ground just as we wanted.

Each step in the process was new to us.

It's the biggest animal we've raised for meat yet.
First time raising animals in a shared effort with community members.
First time we've killed anything with a gun that we've raised ourselves.
First time scalding a pig.
First time hanging meat overnight outside (definitely lost some sleep worrying the dog would rip it down!).
First time breaking down the pig into cuts (and still very much at work on it).

With first times there does come some error. We didn't get everything perfect. But they are lessons we take with us to the next year. We do not want to miss out on seeing our errors on such a big project.

Now I hold the responsibility in honouring our own 2 pigs by attempting the role of a butcher. While Momming 3 little ones simultaneously 😳 Its proven to be a challenge to say the least. But nothing beats a determined homesteader.

Just a couple weeks left for the 4 pigs we have left. We harvested one pig a couple weeks back and just yesterday celebrated the harvest in our community as a pig roast pot luck. It was beautiful and felt incredible filling bellies of our friends and family.

Leaving the roast we were gifted several bins full of scratch and dent squash from a local organic small farmer.

So grateful. Now onto turning some of the roast bones into beautiful and nourishing stock for dinners this week. ♥️
