⛰ RACLETTE 🐮 Raclette is both a type of cheese and a traditional dish, with origins in the alpine regions of France and Switzerland. The cheese is relatively young, giving it a silky texture and low levels of fat separation when heated. We are using Raclette Kaiser from Fritz Kaiser. Served here with French rosette sausage, cornichins and pickled onions (all available from La Ferme!)

Love rich, buttery cheeses like triple creams? Try something Canadian, there are plenty of options. From Riopelle, to Laliberté to raw sheep milk Madawaska, pictured here. In France, a true triple-crème is a cheese that contains at least 75% fat in dry matter (or about 35% fat content in the cheese). This just in! Fiore Sardo, a Slow Food Persidium Pecorino from Sardinia. Made with raw, organic sheep milk, this typical Sardinian cheese was the most produced on the island before industrialisation turned cheese production to Pecorino Romano. The cheese is lightly smoked, with a white, crumbly paste and earthy, barnyard flavour. Quantity is limited. #italiancheese #slowcheese #lafermefamilyfood #torontocheese
