The food culture of a city can tell you quite a lot about it’s people. Stuttgart in Germany was one of the nicest places I’ve visited in a while where it felt safe to be out till the early hours only the morning and where the drinking culture is really not something I feel Asian Brits like me can handle- I mean where are the snacks bro?! 😁

Food festivals, late night conversations over brandy and wine and a “Mercedes” ice-cream with a view 🥰

It was all well and good before my chronic illness diagnosis; but once I started to experience health issues, things suddenly began to look very different.

For those of you that don’t know, I was diagnosed with a chronic illness in 2017 and by 2021 my health had deteriorated to the extent that we were looking at getting a wheelchair to keep me mobile.

Prayer, healing and the right food literally brought me back to life and released me from the vegetative state that I was in during that time.

Knowing what is right for your body is paramount; knowing how to keep your health intact is what I like to help with.

Over the years I’ve been able to learn recipes that help with simple ailments like how to prevent colds/coughs and what can really heal our bodies from fevers, surgery, postpartum and menstrual issues.

Food lately 🥰

Rice: drumstick gravy, morning glory and mushroom stir fry, beetroot raitha and appalams

Toast: with paneer burji and a touch of ketchup 😄

Pol roti: with mixed veggies

Stir fry: Rice with green beans, mushrooms and chilli oil

Rice: with masoor dhal and moringa bhortha 😋

Pol roti is a coconut and flour based flatbread which is best served hot on a rainy day with a cup of tea. Here is a slight twist to the original recipe ☺️

Ingredients: Makes 6-8

2 cups of plain flour (wholewheat is fine too)
200gms coconut, grated
100gms carrot, grated
1 small red onion/ 10 chinnavengaayam, diced small
1-2 green chillies, optional
5-10 curry leaves, chopped fine
1/2 tsp black pepper
1/2 tsp cumin powder
1/4 tsp chilli flakes (optional)
50gms butter
Salt
Water to mix dough

Method:

Mix all the ingredients together in a bowl adding water to the end to bring it together. Cover and leave to rest for 20mins to 2hrs. You can put this in the fridge and use the day after (leave out for 20mins before making)

Grease your palms with butter or oil and pat into flat breads. You could also use a pastry board or greaseproof paper to do this.

Cook on both sides till browned and serve immediately. I have found that I can make these ahead, refrigerate and put them in the toaster the next day if you have leftovers… that’s a big if ☺️

How to make sprouts

Soak your sprouts in water for 5–8hrs or overnight, strain and tie in a clean cloth. Leave for 8hrs of overnight on the kitchen counter and you’ll have your sprouts ready.

Eat them as it dressed as a salad with raw onions, tomatoes, green chilli (optional), black pepper, crushed cumin seeds, salt and a dash of lemon juice ☺️

I’m posting this from London, England and these recipes are formulated for the climate over here. In hotter climates, you don’t have to soak or leave them for as long as you would have to put them in the fridge within 8hrs or so of leaving them to sprout- also most homes in England are best free- but should you have house pests/pets, then leave it in a container to sprout and then put it in the fridge. Consume within one week ☺️

As someone with South Asian heritage, my genes are designed to withstand famines; so the minute I start to undereat without watching my macros, I start to gain weight 🫤

I have found that I need an adequate amount of carbs, fibre and not as much protein as is prescribed for Caucasian people to sustain my ideal body type.

No, I didn’t finish all the rice or the chapathi in this meal, but had a quarter of each and maybe half the appalam 😄
