*WHIPPED HONEY:
Today I’m taking our last year’s crystallized honey and whipping it my mixer. *This is NOT to be confused with creamed honey. THEY ARE NOT THE SAME!
CREAMED honey is more involved and a longer process of controlling the granulation of glucose and fuctose which results in extremely small sugar crystals. The smaller the crystals, the better the creamed honey. A good creamed honey should be smooth, not grainy, like velvet on the tongue. Please support your local beekeeper who sells it!
WHIPPED honey only adds air to make it a fluffy and smoother texture. It doesn’t change the molecular structure of the crystals. This will still have a slightly grainy texture, but will be thicker and spreadable. You can also whip liquid honey, but over time both of these will separate back to their natural state.
