Dave Wall from The Pork Shop shared his pork soup recipe and what I really like about this recipe (besides that it uses my favorite Pork Shop product; spicy Pork loin) is that Dave cut carbs by replacing potatoes with radishes. I wasn't sure that I would like this because radishes aren't my favorite, but they don't taste at all like radishes, and they have the same texture as potatoes! Move over beef burgers; we’ve got a new flavour in town! this week on CTV's Live at 5 What’s for Dinner episode was definitely an eye-opener as the The Kilted Chef cooked up Lamb Burgers spiced with Big Cove Foods topped with a Cucumber Ginger Lemon Mayo made with ALIVE Kombucha. The perfect combo and packed with health benefits.

Lamb Burger with Kombucha Mayo with Big Cove and Alive Kombucha
Makes 4 burgers
1 lb. ground lamb
2 tbsp Mary Had a Lot of Lamb Big Cove seasoning
1 tsp sea salt
½ tsp black pepper
2 green onions, chopped
1 cup all-purpose flour

In a medium-sized bowl, incorporate the ground lamb and seasoning.
Add salt, pepper, and green onions.
Form four patties, approximately 4 oz each.
Place on a plate and refrigerate.
Remove from fridge and lightly dredge in flour.
Using a cast iron pan, melt one tablespoon of butter and start frying your burger for approximately 4 to 5 minutes, until crispy on each side. Or grill on BBQ.

Grill the bun and top with burger patty, spinach, a slice of red onion, and two slices of cucumber.
Finish with cucumber Ginger Lemon Alive Kombucha may (recipe below).

Cucumber Ginger Lemon Alive Kombucha Mayo
½ cup mayonnaise
1 ½ tsp Mary Had a Lot of Lamb Big Cove seasoning
¼ cup Ginger Lemon Alive Kombucha
¼ cup grated cucumber

Combine and refrigerate.

Cold Water Shrimp Dip

This was a treat that Alain enjoyed while growing up in Edmundston NB, being on the Madawaska border it was something that they were able to buy on the US side. I had never seen it done this way but since it's essentially a cocktail sauce with the shrimp added in it makes perfect sense, after all, who doesn't love shrimp cocktail!

Wow! This Week CTV's Live at 5 What’s For Dinner, The Kilted Chef Alain Bosse cooked up a Pecan Crusted Stuffed Chicken Breast with Goat Cheese and Haskap Highland Orchards berries. It sounds (and tastes!) so complex, yet it is simple enough for anyone to cook it! Invite some friends for this one… they won’t believe their taste buds!

Goat Cheese and Haskap Berries Stuffed Chicken Breast with Haskap Highland Orchards
Serves 2
2 boneless skinless chicken breasts
½ cup flour on a plate
Egg wash - 2 eggs and 1 oz milk whisked in a bowl
½ cup pecans, chopped
2 oz of local goat cheese
½ cup haskap berries (we used Haskap Highland Orchards haskap berries)
¼ cup bacon, diced
2 tbsp olive oil

Start by pounding the two chicken breasts until they're the same thickness, using a bag or cellophane wrap and a mallet or rolling pin.
In a small bowl, mix the haskap berries with bacon and goat cheese.
Stuff your chicken breast with the mixture.
Fold your chicken breasts in a similar fashion to making a wrap, fold the two ends in then roll tightly.
Sprinkle with salt and pepper.
Roll in flour, then egg wash and finish in the crumbled pecans.
Place on a baking pan lined with parchment paper and drizzle with olive oil.
Bake in oven at 400° and cook until there is an internal temperature of 165 F.
Take out of the oven and let rest for 4 to 5 minutes and you are ready to slice.

Bacon Sauce Ingredients:
1 cup haskap berries
2 tbsp butter
2 oz of bacon, chopped
¼ cup local maple syrup

In a medium sized pan, place the butter, diced bacon, and local maple syrup and sauté.
Crush ½ of the haskap berries in the sauce and let it reduce for few minutes until nice and thick.
Haskap Highland Orchards is available at Sobeys, Farm Markets and independent health food retailers.

Cajun Shrimp Salad

The humble cold-water shrimp is well, a bit shrimpy in stature but it more than makes up for it in flavor! Our cold, clear pristine waters produce a superior tasting product that is both delicious and affordable. It is very important that cold -water shrimp be allowed to thaw on its own to bring out its superior taste. Boatskeg Distilling Co. is a new distillery located in Southwest Nova Scotia, focused on premium spirits and craft cocktails.

It all began when two local friends came up with an idea. One of them had an old, abandoned boat shop, the other a descendant of bootleggers. Together, they combined their bootlegging and boatbuilding heritage and created a craft distillery from an old boatyard.

Their distillery location consists of a cocktail bar and retail store with a picturesque view of the Pubnico Harbour. Yarmouth & Acadian Shores / Côtes acadiennes et Yarmouth Boatskeg Distilling Co.

This week on CTV, the humble panini got a CTV's Live at 5 What's for Dinner makeover courtesy of the The Kilted Chef! He served up a sumptuous Chicken and Apple Panini with Avonlea Clothbound Cheddar, accompanied by Moo Crisps thanks to Creamery It’s always good to have a panini recipe in your back pocket - a hit with kids and adults of all ages!

Chicken, Cheddar, and Apple Panini with Creamery
Serves 2
4 slices local brown bread
8 oz cooked chicken
½ local apple, sliced
2 oz cheddar cheese, shredded (we used Cows Creamery Avonlea Clothbound Cheddar)
4 tbsp mayonnaise
2 oz (we used Cows Creamery butter)

Spread the bread generously on both sides with mayonnaise.
Place the chicken on the bottom half, then top with apple slices and top with cheddar cheese. Butter both sides and grill in a Panini press until bread is golden brown and the cheese has melted.
Serve with Cows Moos Crisps on the side.
Cows Creamery is available at Sobeys and all COWS stores across Canada.

The Kilted Chef created a stunning Asian Snow Crab Avocado Salad This week on CTV's Live at 5 What’s for Dinner thanks to Logan's Daily Catch / North Nova Seafoods and it was so unbelievably simple, we’ve already recreated it at home! Pre-cook your rice and assemble in minutes for an incredible blend of flavours.

Asian Snow Crab Avocado Salad with North Nova
Serves 2
8 oz Asian snow crab meat
2 tbsp olive oil
½ lemon, juice only
2 tbsp fresh basil, chopped
Salt and pepper to taste
8 oz cooked rice
1 avocado, sliced
4 tbsp Asian vinaigrette (see recipe below)
4 leaves of lettuce

Combine the snow crab (we used North Nova snow crab), olive oil, lemon juice and basil.
Mix well.
Place two leaves of lettuce on each plate.
Top with the rice, then slices of avocado and snow crab mixture.
Drizzle with the Asian dipping sauce.

Asian Dipping Sauce Ingredients:
4 tsp fish sauce
1 clove garlic, minced
2 tbsp lime juice
2 tbsp sugar or 1 tbsp of local honey
Combine all ingredients and mix well.

Spicy Thai Noodles

This is a recipe that gets made a lot in our house, it can be on the table in less than 30 minutes. Quite often if I'm cooking pasta for dinner, I'll do a little extra and use it for this dish a few nights later. You can make it with any type of long noodle, or if you want to make it more authentic use a broad noodle or even a rice noodle. Today's version is meatless however this dish adapts well to chicken, shrimp, pork or beef. Received my “Foodie Box” yesterday. I was super excited to open it and happy with all my surprises for baking!!😊🎂🧁
The Kilted Chef is flying in from another event, but his stand-in is welcoming everyone--and his team are busy setting up his stage!
The Kilted Chef has been whipping out awesome delicacies all day long here at the Atlantic Pavillon using products from Nova Scotia and New Brunswick.

Our super salad was absolutely delicious, served with bacon, blueberries, Annapolis Valley apples and a maple vinegar dressing. 🔥 (I can’t describe this as magically as Chef would - so he may jump in on this post and give us further details.)
