This week’s comes from the spring chapter of my cookbook! 🇲🇹
This Maltese Kusksu is a unique soup that is packed with cauliflower florets, onions, tomatoes, fava beans, and pearl couscous. What makes this soup special is the addition of fresh farmer’s cheese (which can easily be substituted with fresh mozzarella) and eggs cracked into the soup and cooked. This is my Nana’s recipe, and I know she will be happy that you tried this Maltese soup! 🇲🇹❤️
