Apparently jalapeños have a whole colour journey before they become salsa.
They start out innocent and green. Then some decide to develop a dramatic purple-black phase. Leave them long enough and they eventually ripen all the way to red.
And those little white “stretch marks”? That’s called corking. Basically, the pepper is growing faster than its skin can keep up, which is honestly very relatable.
So no, my jalapeños are not diseased, confused, or secretly becoming another vegetable. They’re just maturing with flair.
Green. Purple. Corked. Red.
