Good morning! I hope everyone had a Merry Christmas and Happy New Years!

Now that we are back to our regular schedule and kids ar back in school. Here are some recipes for the rest of the week/weekend! I hope you try and enjoy!

Oven baked Boneless Pork Loin Centre cut chops with cucumber salad
�Ingredients
* 4 boneless pork chops at least 1 inch thick
* 1 tablespoon olive oil
* 1 teaspoon yellow mustard
* 1 tablespoon brown sugar
* 1 teaspoon ground paprika
* 1 teaspoon garlic powder
* 1 teaspoon onion powder
* ½ teaspoon salt
* ¼ teaspoon ground black pepper

Instructions
1. Prep: Heat oven to 400°F and line a rimmed baking sheet with baking parchment OR aluminum foil
2. Season: Rub chops all over with oil and mustard. Combine brown sugar, ground paprika, garlic powder, onion powder, salt and pepper in a small bowl. Rub seasoning blend all over chops.
3. Bake: Bake on middle rack for 12-15 minutes, depending on thickness of chops (about 6 minutes PER ½ inch thickness), OR until they reach at least an internal temperature of 140°F (or up to 160°F according to personal preference). Turn oven to broil and broil the pork chops 1-2 minutes, until browned and internal temp reaches at least 145°F. (Leave chops on middle rack if using parchment.
4. Rest: Remove from the oven and allow chops to rest in the pan for 5 minutes before serving, in order to let temperature rise and juices settle. Do not skip rest!��

Air fryer salmon bites served with Fresh Express Asian salad kits And Ben’s original rice packets

Ingredients
* 4 6 ounce skinless salmon filets, diced in 1 inch chunks
* olive oil spray
* 1 tablespoon sweet paprika
* 1/2 teaspoon dried cayenne pepper
* 1 teaspoon garlic powder
* 1 teaspoon dried thyme
* 1 teaspoon dried oregano
* 1 teaspoon salt
* 1/8 teaspoon black pepper
* lemon wedges, for serving
* chopped parsley, for garnish
* brown rice, optional for serving

Instructions
1. Place salmon in a large bowl and spritz the salmon with oil.
* Combine all the spices, from paprika to black pepper in a small bowl and mix. Rub all over the salmon.
* Spray the basket with oil.
* Place salmon in the air fryer basket and air fry 400F about 5 to 7 minutes, shaking halfway until the salmon is cooked through in the center and browned all over.
* Serve with lemon wedges and fresh parsley.�

Unstuffed pepper bowls
INGREDIENTS
* 1 clove garlic
* 1 yellow onion
* 2 bell peppers (red, yellow or orange)
* 1 Tbsp olive oil
* 1/2 lb. ground beef or ground chicken
* 1 15oz. can diced tomatoes
* 1 cup long grain white rice (uncooked)
* 1 tsp dried basil
* 1 tsp dried oregano
* 1/4 tsp freshly cracked black pepper
* 1.5 cups beef broth
* 1 8oz. can tomato sauce
* 1 tsp Worcestershire sauce
* 1 cup shredded mozzarella
* 1 Tbsp parsley

INSTRUCTIONS
1. Mince the garlic and dice the onion and bell pepper.
2. Add the olive oil and ground beef to a deep skillet. Cook the beef over medium heat until it is fully browned.
3. Add the diced onion, bell pepper, minced garlic, basil, oregano, and pepper to the skillet. Continue to cook and stir until the onions are soft.
4. Next, add the diced tomatoes (with juices), uncooked rice, and beef broth. Give everything a brief stir to combine.
5. Place a lid on the skillet and turn the heat up to medium-high. Allow the broth to come up to a full boil. Once boiling, turn the heat down to low and let it continue to simmer for 15 minutes. After 15 minutes, turn the heat off and let it rest, lid still in place, for another five minutes.
6. While the pot is simmering, combine the tomato sauce and Worcestershire sauce.
7. Once the rice has rested for 5 minutes, remove the lid and fluff it with a fork, gently folding the ingredients back together (peppers and tomatoes may float to the top while it simmers).
8. Pour the prepared tomato sauce over top, then sprinkled the shredded mozzarella over the sauce. Place the lid back on top and let the heat from the skillet melt the mozzarella. Once melted, sprinkle a little chopped parsley on top and serve.

Good morning everyone! I hope you are all staying warm and safe in this wild weather!

Here are the recipe for Thursday- Sunday!

Prime rib roast with mashed potatoes, gravy and steamed broccoli
Ingredient
* 5 pounds beef prime rib* (if larger, double the spices/seasonings)
* Sea salt
* 2 tsp black pepper
* 2 teaspoons fresh or dried rosemary
* 1 teaspoon fresh or dried thyme
* 8 cloves garlic , minced
* 1/4 cup olive oil
* horseradish , for serving (optional)
* Beef Gravy packets
* Broccoli
* 5lb russet or red potatoes

Instructions
1. Bring meat to room temperature:Remove prime rib from the refrigerator one hour before cooking. Season it on all sides with salt and cover it loosely with plastic wrap as it comes to room temperature. Prime rib roast will cook better and more evenly when it’s at room temperature.
2. Adjust oven racks: When you are ready to cook the prime rib, lower/adjust your oven rack so the meat will cook in the center of the oven. Preheat the oven to 500 degrees F.
3. Combine seasonings: In the meantime, mix together 1 ½ teaspoons salt, pepper, rosemary, thyme, garlic, and olive oil.
4. Prepare roast: Pat the roast with paper towels. Spoon seasoning over it, rubbing it onto all sides. Place bone-in roast with the bones down, inside a roasting cast iron pan. Place a boneless roast on a rack inside the pan.
5. Bake prime rib at 500 degrees for 15 minutes, then reduce the oven temperature to 325 degrees and continue baking until desired level of doneness. Use a meat thermometer to check the temperature of the meat:�Rare: 120 degrees F (about 10-12 min/pound). �Medium Rare: 130 degrees F (about 13-14 min/pound)�Medium: 140 degrees F (about 14-15 min/pound)�Medium Well:150 degrees F�-Important: The meat will continue to cook as it rests out of the oven so remove it from the oven 5-10 degrees before it reaches your optimal temperature.)
6. Rest: Remove it from the oven and tent it with foil. Allow it to rest for 30 minutes before carving.
7. Carve prime rib roast by slicing against the grain into about ½ inch thick slices. Serve with horseradish, if desired.��
Spaghetti and meat sauce hidden with a fresh express salad kit
Ingredients
-1 pack Co-op spaghetti noodles
-1 shredded zucchini
-1 red pepper diced
-1 medium yellow onions
-2 jars Classico pasta sauce
-1-2 lb ground beef
1 pack furlani garlic bread (frozen)

Best baked chicken leg recipe served with steamed cauliflower and cheese sauce
ingredients
* 6 chicken legs
* 2 tsp paprika
* 1.5 tsp kosher salt
* 1 tsp onion powder
* 1 tsp garlic powder
* 1 tsp rosemary, dried
* ½ tsp ground black pepper
* ½ tsp ground mustard
* 1 tbs olive oil
Directions
1. Preheat oven to 425°(F)
2. Pat chicken legs dry with a paper towel
3. Place chicken legs in a large ziptop bag and add olive oil. Close bag and shake to coat chicken well with the oil.
4. Add seasoning mix to bag, close and shake to get chicken well coated with seasoning.
5. Line a baking sheet with foil and spray with non-stick cooking spray.
6. Place chicken legs on baking sheet and place on middle rack of oven for 40 minutes, turning halfway.
7. Chicken must have internal temperature of at least 165°(F), but 185-195°(F) is ideal for best results.
8. Let rest for several minutes before serving.

Campbells soup and grilled cheese sandwiches
Ingredients
-1-2 cans campbell’s soup
-1 loaf co-op bread
-1 pack kraft cheese slices
-margarine (for the bread )

Cheemo Perogies and harvest farmers sausages

Co-op chicken burgers with co-op burger buns.
With McCain fries and a sode of (mini) cucumber salad

Sheet pan chicken And veggies
INGREDIENTS
* 6–8medium carrots, cut into 2- to 3-inch sticks
* 1 bag green beans, washed and trimmed
* 1 bag baby red potatoes, halved or quartered (may sub cubed sweet potato or cut red potatoes)
* 1-2 sliced zucchini
* 1 medium red onion, cut into wedges(can sub yellow or white onion)
* 3–4 garlic cloves, minced
* 1 tablespoon chopped dried or fresh rosemary
* 2 teaspoons fresh thyme leaves (or ¾ teaspoon dried thyme)
* ½ tablespoon olive oil or avocado oil (use 1 tablespoon oil if using skinless chicken)
* 1½–2 lbs. bone-in, skin-on chicken thighs (may sub 1 lb. boneless, skinless or skin-on chicken thighs)
* ½ teaspoon fine salt
* ½ teaspoon black pepper
* 1-2 tsp garlic powered
* 1-2 tsp onion powder

INSTRUCTIONS
1. Preheat the oven to 425ºF. Line a large rimmed, baking sheet with parchment paper.
2. Toss all of the chopped vegetables and herbs with oil directly on the baking sheet.
3. Nestle the chicken thighs among the vegetables, sitting them slightly on top of the veggies.
4. Season the chicken and veggies with salt and pepper.
5. Bake until the chicken is cooked through and the baby potatoes are tender, about 30-35 minutes, tossing and turning the vegetables every 10 minutes.
