According to the characteristics of yeast, we can divide craft beer into top-fermentation and lower-fermentation.
Top-fermentation beer means yeasts are floating on the surface or in the middle of beer, including German wheat beer, Alt beer, Kolsch, Ale and Black stout.
Lower-fermentation beer means yeasts are precipitationg to the bottom, which contains Pilsen beer, Dortmund beer, Munich dark beer, Export beer, Marzen, Bock&Double bock Beer.
In China, 99.9% are lower-fermentation while in the UK there will be more top-fermentation beer. This beer is faster to be drinkable, thus makes the brewing recycle faster, too.
No matter how it is fermentated, we only care about whether it is passionate to drink~~~
