Carlo Odello, President of IIAC, leads the opening certification program,
introducing participants to the tradition, culture, and standards of Italian espresso.

Over two days, the course explores Italian espresso from tasting fundamentals to deeper understanding —
from recognizing quality through sensory analysis,
to exploring its historical, anthropological, and technological dimensions.

Participants also experienced CAYE’s production facility and laboratory,
connecting the knowledge from the classroom with real-world coffee technology.
