Moody skies outside, but the olive trees are glowing. Silvery, resilient, and thousands of years of history right in our backyard.

Did you know that according to Greek mythology the olive tree was brought into being by the goddess Athena who won a contest with Poseidon god of the sea. The prize was the patronage of a great city and would be won by whoever presented the city with the best gift. Poseidon struck the ground with his mighty trident and created a sea which although impressive, was too salty to drink. Athena, in less dramatic style knelt and planted something in the ground which grew into an olive tree. This turned out to be a much more useful gift. The tree produced not only food but oil for lighting, and wood for heat and building.

Athena won the contest and consequently the great city was named in her honour – Athens. Even today, an olive tree stands where this legendary contest took place, and it is said that all the olive trees in Athens are descended from the olive tree grown by Athena.

Figs are in season right now here in Cyprus, and what better way to enjoy them than piled onto a fresh baguette with creamy burrata, prosciutto (optional!), fresh mint, a drizzle of honey, and good extra-virgin olive oil?🫒🫒✨✨

It’s refreshing, effortless, and comes together in minutes. Plus, serving it on a rustic wooden board instantly elevates a simple dish into something cozy and intentional when you have friends or family over.

Our dear friend Part Thyme Kitchen ® made this simple Mediterranean recipe made with just a few ingredients.

The octopus cooks slowly in its own juices until beautifully tender, then it’s sliced and finished with our own extra-virgin olive oil, έλfen, lemon and oregano.

Serves: 4
Prep time: 15 minutes
Cooking time: 60–90 minutes

Ingredients

* 1 cleaned octopus, about 1–1.2 kg, or 4–6 large te****les
* 1 medium onion, thinly sliced
* 3–4 sprigs fresh thyme
* Zest of 1 lemon
* Juice of ½ lemon
* 80 ml extra-virgin olive oil, plus extra for serving
* Freshly ground black pepper
* 1 tsp dried oregano
* Salt and pepper, as needed

How to make it

1. Preheat the oven to 200°C fan.
2. Lay a large sheet of parchment paper over a sheet of aluminium foil.
3. Place the octopus in the centre. Add the sliced onion, thyme, lemon zest and juice, freshly ground black pepper and about half of the olive oil.
4. Wrap the parchment paper tightly around the octopus, then seal everything well with the aluminium foil. There’s no need to add water — the octopus will release its own juices as it cooks.
5. Place the parcel on a baking tray and cook for about 60 minutes. A larger octopus may need 75–90 minutes.
6. Check that the octopus is tender by inserting a knife into the thickest part of a te****le. It should slide in easily.
7. Let the octopus rest for 5–10 minutes, then slice it into thin pieces.
8. Arrange on a serving plate, drizzle generously with Ελfen extra-virgin olive oil and finish with a sprinkle of oregano. Add a little extra lemon juice & salt (optional)

An olive tree carries so much history and resilience. Look at its branches—it is as if they are trying to speak to you. But look even closer at its weathered, ancient core.

Generations ago, the family originally began cultivating olive trees primarily for their own needs. They established their first groves by uprooting wild olive trees from the mountain forests and replanting them.

Deep inside that rugged trunk lies the strength of the wild mountain roots, fused with the care of those who shaped it. These resilient wild trees were grafted with cultivated varieties. As the domestic branches grew over time, the wild growth was carefully pruned away, allowing the trees to mature into the deeply productive, historic olive trees standing strong today. 🌳✨

Grapes are in season right now in Cyprus—and what better way to use them than in a petite salad or an elegant main course?

We saw this recipe by and couldn’t resist recreating it, with a minor twist☺️

Warm Notes: Artisan Spanish Chorizo, gently sautéed
Herbs: Hand-torn Fresh Mint & Garden Coriander
Aromatic Accent: Rustic-cut Spring Onions
Finish: Shaved Parmesan Reggiano & a drizzle of House-Blend Elfen Olive Oil
Dressing: Splash of White Grape Vinegar & Sea Salt

Preparation
1.Crisp the Spanish chorizo in a heavy skillet until golden and fragrant. Set aside to cool slightly.
2. In bowl, gently fold the halved seedless grapes, mint, and coriander together with white grape vinegar and a pinch of salt.
3. Transfer the dressed grapes to a serving platter. Scatter the sautéed chorizo and unevenly sliced spring onions across the top.
4. : Finishing with delicate parmesan shavings, whole or crushed shelled pistachio nuts and a luxurious drizzle of ελfen evoo right before serving.
