Τι είναι τελικά η Craft μπυρα;
Είναι όμως όλες πραγματικά craft;
Τι ρόλο παίζει η ποσότητα παραγωγής;
Γιατί όμως μια craft μπύρα κοστίζει περισσότερο;
Οι NOMAD ή Gypsy Brewers.

What Does “Craft” Really Mean?
Lately, I’ve been seeing more and more b**rs on the market being labelled as “craft”.
But are they all really craft b**rs?
As a b**r industry professional since 2006, with experience in importing and selling different styles of b**r, and as both a Certified Cicerone and B**r Sommelier, I felt the need to share some thoughts on what “craft b**r” actually means.
Let’s start with something fundamental:
There is no single, globally accepted and legally established definition of the term “craft b**r”.
The term has become primarily associated with small and independent breweries. In several countries, small breweries have formed organisations and introduced special seals or logos, allowing consumers to recognise that a b**r comes from a small, independent brewery.
In Cyprus, we do not yet have an equivalent organisation.
Craft does not mean “anything that isn’t l***r”.
This is perhaps one of the biggest misconceptions.
A large brewery can produce Weiss, Stout, IPA or NEIPA etc. The fact that a b**r is an IPA does not automatically make it craft.
And, of course, the opposite is also true: a l***r can absolutely be a craft b**r.
B**r style and whether a b**r is craft are two different things.
What role does production volume play?
Production scale is an important factor in the discussion around craft b**r.
If a large brewery produces a particular b**r in a small batch, that does not necessarily make that b**r craft.
Small breweries have one major advantage: flexibility.
They can experiment with local fruits, herbs, spices and different ingredients. They can also produce limited editions, seasonal releases and experimental b**rs in quantities that might not be commercially attractive to a large industrial brewery.
But why does craft b**r cost more?
The answer is not just in the recipe.
A large brewery can operate 24/7 and spread its operating costs across enormous volumes of product.
A small brewery, on the other hand, may brew only once or twice a week. Similar operating costs are therefore spread across a much smaller number of bottles.
There is also the cost of raw materials and packaging.
A brewery purchasing huge quantities of malt, hops, bottles or cans has very different purchasing power from a small brewery buying limited quantities.
In Cyprus, we also have to take import costs into account.
There is another category, however, that often creates confusion:
NOMAD or Gypsy Brewers.
These are brewers who do not have their own brewery and produce their recipes using the facilities of third-party breweries.
This is where things become more complex.
The fact that a NOMAD brewer produces a small batch does not mean, in my view, that it should automatically be classified as craft. I believe we also need to consider where the b**r is produced and the scale of the brewery in which that production takes place.
If a small batch is produced at the facilities of a large industrial brewery, then it is certainly a NOMAD production. Personally, I would not consider that enough to classify it as “craft”, but this is exactly the kind of discussion worth having.
And perhaps this is the most important point:
Craft is not simply a style of b**r. And it certainly isn’t just a word we put on a label.
For consumers, it matters to know who is behind the b**r, where it is produced, at what scale it is produced, and why it may cost more than another b**r.
Especially as the b**r market in Cyprus continues to grow, I believe we need more education and greater transparency around the term “craft”.

Craft b**r is on the decline, and perhaps one of the strongest pieces of evidence of that notion is what’s going on in Colorado. The state is arguably one of the best in the US for breweries. In 2024, the state lost 41 breweries and saw b**r sales shrink, according to the Colorado Beverage Coalition, per KDVR.

The group revealed that sales were down more in Colorado than the national average. The state saw a 3.2% decrease compared to the 2% drop-off nationwide.

Cyprus Microbreweries Series
By Certified Cicerone Sylvia Savvidou
Today we conclude the Cyprus Microbreweries Series with the final independent microbrewery operating in Cyprus with its own brewing equipment: Octopus Microbrewery.
Octopus Microbrewery holds the distinction of having received the first microbrewery licence in Cyprus. Although the brewery officially opened under the Octopus name in 2019, it took over the facilities of the former Prime Microbrewery, which had been operating since 2012.
The brewery is located in the industrial area of Sotira, near Paralimni. The owner, Taras Lozhenko, originally from Ukraine, is not only a passionate b**r enthusiast but also an accomplished artist and talented marketer. Taras personally designed all the Octopus b**r labels and has built the brewery's distinctive visual identity and marketing presence.
The master brewer is Tetiana Volynska, also from Ukraine. In addition to producing the brewery's core range, Tetiana creates special and seasonal b**rs every one to two months, often tailored for specific customers or occasions. Some of her innovative creations include a smoked Souvla B**r released for Tsiknopempti, a Watermelon B**r, and many more experimental brews that showcase her creativity and brewing expertise.
The brewery's core range consists of:
• L***r
• Weiss
• Session IPA
• Zero IPA
One of the brewery's most fascinating projects was inspired by archaeological discoveries in Kissonerga, in the Paphos region. Excavations revealed evidence of a Bronze Age brewery, believed to be one of the oldest brewing sites in the Mediterranean. Researchers found indications that b**r at the time was brewed using figs. Inspired by this discovery, Octopus collaborated with archaeologists and, based on the findings from the 3,800-year-old brewery excavation, created Figs and Herbs, a b**r brewed with malt, fresh figs, Cypriot mountain herbs, and yeast. Hops are used only in small quantities, both because hops were not part of ancient brewing practices and to allow the aromas of the figs and herbs to shine through.
Another flagship specialty b**r is the brewery's celebrated Cyprus Grape Ale. This unique b**r is produced using 50% Xinisteri grape must and 50% b**r wort, which are fermented together. The result is a remarkable hybrid beverage that combines the aromatic complexity of Xinisteri w**e with the refreshing character of b**r and a texture reminiscent of sparkling w**e.
The first Cyprus Grape Ale was produced in 2021 using Xinisteri grapes from Agia Mavri Winery. Later collaborations with Zambartas Winery resulted in two different versions: one fermented once and another undergoing a double fermentation process. Today, the brewery continues the tradition with a version produced using Xinisteri grapes from Tsakkas Winery.

While the Grape Ale has brought international recognition to the brewery, the true signature b**r of Octopus is undoubtedly Figs and Herbs. It is a b**r unlike any other in Cyprus and perhaps the closest modern interpretation of the island's ancient brewing heritage.
Octopus Microbrewery is also home to the only b**r museum in Cyprus, where visitors can discover the fascinating history of brewing on the island. Within the same premises, guests can enjoy the brewery's taproom, tasting the core range and, if the timing is right, one of Tetiana's seasonal creations.
Brewery tours are available by reservation through the brewery's website.
One of the most charming aspects of Octopus Microbrewery is its artwork. Every b**r label features a different octopus character hand-drawn by Taras. The octopus is not merely a logo; it becomes the storyteller of each b**r. Sometimes adventurous, sometimes mischievous, and always expressive, the octopus seems to take on a new personality with every brew. Much like the brewery itself, it refuses to stay in one lane. With eight arms, it appears perfectly equipped to brew b**r, create art, manage marketing, welcome visitors, and still have a few tentacles left for new ideas. If the b**rs are memorable, the labels ensure that the octopus stays in your mind long after the last sip.
Octopus Microbrewery successfully connects Cyprus with international craft b**r culture while remaining deeply rooted in local history, ingredients, and traditions. Through creativity, innovation, and respect for heritage, Taras have created a brewery that represents both the past and the future of Cypriot brewing.
Thank you, Taras, brewmaster Tetiana, and the entire Octopus team, for the unique and award-winning b**rs you bring to Cyprus. May you continue to surprise b**r lovers both on the island and around the world with your imagination, passion, and exceptional brewing talent.

• L***r
• Weiss
• Session IPA
• Zero IPA
• World B**r Awards 2025 – Χρυσό Μετάλλιο – Cyprus Grape Ale 9%
• World B**r Awards 2025 – Χάλκινο Μετάλλιο – Cyprus Grape Ale
• Greek B**r Awards 2024 – Αργυρό Μετάλλιο – Cyprus Grape Ale
• Meininger's International Craft B**r Awards 2022 – Χρυσό Μετάλλιο – Cyprus Grape Ale
• Meininger's International Craft B**r Awards 2022 – Grape Ale of the Year

Tip of the Day by Certified Cicerone Sylvia Savvidou

Did you know?
The original role of hops in b**r wasn’t just for bitterness or aroma it was mainly as a natural preservative.
