Hello, family! 🥰 If there is one thing that unites us just as much as our passion for football, it’s food! Watching a World Cup match in Mexico isn’t just any ordinary event; it’s a sacred ritual where the table is packed with colors, textures, and incredible flavors to get us through those ninety minutes with our hearts racing.
Around here, we don’t just settle for a simple bag of chips. We take it to a whole new level! From classic nachos loaded with cheese and jalapeños, to spicy wings, and freshly made guacamole right out of the molcajete with crispy tortilla chips. And of course, for those who crave bold street-style snacks, a good bowl of dorilocos mixed with gummy candies, peanuts, and salsa! 😮‍💨🔥
But the most beautiful thing about Mexico is that the star snack changes completely depending on the region you’re watching the game in:
🌊 In the North: The warm weather and closeness to the sea rule the table, so a fresh ceviche or ice-cold seafood paired with a beer are the go-to choices for celebrating goals.
🥩 In the Bajío region and Michoacán: We love to treat ourselves to something a bit heartier, like a good carne apache(lime-cured minced beef) perfectly marinated with lime and chili to enjoy on crispy tostadas.
🦁 In Central Mexico (especially in León!): The undisputed king of match days is the famous guacamaya—a masterpiece of a sandwich filled with crispy pork rinds (chicharrón) and a spicy pico de gallo that will literally make you sweat from the excitement.

Hola, familia! ✨ At Frau Lopez, we love discovering those sweet treasures that are part of Mexico’s history. To wrap up our journey through San Luis Potosí on a high note, today I’m bringing you a heavenly dessert: a smooth and creamy Potosí-style Rompope Flan. The perfect touch of this traditional liqueur gives it a unique and comforting flavor that will transport you straight to the colonial convents of San Luis Potosí. A sweet treat for the soul! 🍮✨
Flan de Rompope Potosino 🍮🍂
Ingredients:
For the caramel: 100g sugar.
For the flan: 1 can (397g) sweetened condensed milk, 1 can (340g) evaporated milk, 4 large eggs, 1 tsp vanilla extract, and 3/4 cup of traditional Mexican Rompope.
Step-by-Step:
Make the Caramel: Melt the sugar in a pan over medium heat until it turns a golden amber color. Carefully pour it into your flan mold, coating the bottom completely. Let it cool.
Blend: Place the condensed milk, evaporated milk, eggs, vanilla, and the star ingredient—the Rompope—into a blender. Blend until perfectly smooth.
Pour: Pour the mixture through a strainer into the caramel-lined mold. Cover the mold tightly with aluminum foil.
Bake (Bañomaría): Place the mold inside a larger baking pan filled with hot water (reaching halfway up the flan mold). Bake at 180°C (350°F) for about 50-60 minutes, or until a knife inserted comes out clean.
Chill & Serve: Let it cool to room temperature, then refrigerate for at least 4 hours. Unmold carefully onto a plate and enjoy its creamy perfection!

This month, we are traveling to San Luis Potosí, and the one dish that defines this state is the incredible Enchiladas Potosinas.
Here is a short, friendly recipe we’ve adapted for ingredients you can easily find at your local German supermarket (Rewe, Edeka, or even Lidl!).
German-Friendly Enchiladas Potosinas Recipe

Ingredients:
For the "Salsa" (filling and sauce):
3 medium fresh red bell peppers (for color).
1-2 small fresh chili peppers (Habanero or bird's eye chili, for heat).
1/2 white onion.
2 garlic cloves.
1 tsp salt.

For the Assembly:
10-12 corn tortillas (check the "international" aisle or specialty stores).
200g mild feta cheese (as a substitute for queso fresco), crumbled.
Neutral oil for frying.

To Serve:
Sour cream (or Schmand).
Fresh avocado, sliced.
Cilantro (or parsley).

Preparation:
Prepare the Sauce: Place the red bell peppers, chili, onion, garlic, and salt in a pot. Cover with water and boil until the peppers are very soft.
Blend: Transfer the vegetables to a blender. Blend with just enough of the cooking water to make a smooth, slightly thick sauce. This will be both the sauce for dipping and the basis for the filling.
Prepare the Filling: In a small bowl, mix the crumbled feta with a few tablespoons of your new sauce, creating a tasty cheese paste.
Enchilada Creation: Lightly heat a tortilla so it's pliable. Dip it into the remaining red sauce, coating both sides.
Fill and Fold: Place a small spoonful of the cheese mixture in the center. Fold the tortilla in half like a quesadilla. Tip: You can use a toothpick to hold it if needed.
Quick Fry: In a shallow pan with hot oil, lightly fry the prepared enchiladas for just 1-2 minutes per side, until the outside is slightly crispy and the cheese is warm.
Plate and Garnish: Serve a stack of 3-4 enchiladas. Top generously with sour cream, fresh avocado, and cilantro.

Historically born from the silver fever of the 16th century, this land is a tapestry of colonial elegance and breathtaking natural wonders. From the golden streets of its capital to the lush, surrealist gardens of the Huasteca Potosina, SLP is a place where history feels alive.

But the true magic? It’s on the plate! 🥘 San Luis Potosí offers a gastronomy that is as diverse as its landscape:
