In Frau López’s kitchen, there is one golden rule: without a good salsa on the table, the meal is simply not complete! 🌶️🥑✨
Salsas are not just a side dish—they are the soul and identity of Mexican gastronomy. A great table should always have variety to contrast flavors, textures, and spice levels. Today, I'm sharing quick recipes for our foolproof trio that no Mexican table should ever miss:
🥣 TRIO OF ESSENTIAL MEXICAN SALSAS
1. 🟢 Raw Green Tomatillo Salsa (Salsa Verde Cruda)
Fresh, tangy, and perfect for tacos and tostadas.
Ingredients: 5 green tomatillos, 2 serrano peppers, ¼ onion, 1 garlic clove, 1 handful of cilantro, salt, and a splash of water.
Preparation: Place all raw ingredients into the blender. Blend in quick pulses to keep a coarse, crushed texture. Serve and garnish with finely chopped onion and fresh cilantro.
2. 🔴 Roasted Red Tomato Salsa (Salsa Roja Asada)
Deep, smoky, and ideal for meats and eggs.
Ingredients: 3 ripe tomatoes, 2 jalapeño or serrano peppers, ¼ onion, 1 garlic clove, and salt to taste.
Preparation: Roast the tomatoes, peppers, onion, and garlic on a skillet (comal) until the skins are nicely charred (tatemada). Blend everything in a molcajete or blender on low speed with a pinch of salt until thick.
3. 🟤 Crushed Dried Chili & Tomatillo Salsa (Salsa Martajada)
Intense, spicy, and packed with character.
Ingredients: 4 dried chiles de árbol, 2 morita peppers, 4 green tomatillos, 1 garlic clove, and salt.
Preparation: Lightly toast the dried chiles on a skillet (be careful not to burn them!). Roast the tomatillos and garlic. First, grind the dried chiles with garlic and salt in a blender or molcajete, then add the roasted tomatillos and process gently to maintain a coarse, crushed texture.

A Jalisco Masterpiece: Originating in southern Jalisco during the late 19th century, this classic son abajeño represents the pure, unfiltered soul of traditional mariachi music.
Who was "La Negra"?: Popular legend says it was composed for Albina Partida, a woman from Tuxpan, Jalisco, nicknamed "La Negra." The lyrics capture courtship, passion, and that bittersweet romance so deeply rooted in Mexican folklore.

Every September, the heart of Mexico beats louder and with unparalleled pride. 🇲🇽❤️
In Mexico, "Las Fiestas Patrias" are not just dates on a calendar; they are a sensory explosion of color, sound, and flavor. It is a time when squares (Zócalos) across the country fill with the collective cry of "¡Viva México!", the booming sound of mariachis, the bright colors of the flag, and the incredible aroma of Pozole, Chiles en Nogada, and traditional antojos. It’s a moment of pure unity and cultural celebration that transcends all borders.
But what happens when you are far from home?
For Mexicans living in Germany and abroad, the distance doesn’t diminish the flame of patriotism; it intensifies the need to keep it alive. We trade the grand Zócalos for intimate gatherings and community events, where our homes become embassies of culture, and our kitchens become sanctuaries of tradition.
Celebrating Independence Day in Düsseldorf or Berlin is an emotional journey. This dark, tangy, and spicy variation of classic aguachile gets its dramatic color and deep flavor from a blend of roasted chiles and savory dark sauces. It’s perfect for hot sunny days and guaranteed to be the star of any gathering! ☀️🌊
🦐 QUICK AGUACHILE NEGRO RECIPE
Ingredients:
500g fresh raw shrimp (butterflied and deveined)
Juice of 10-12 fresh limes
The Black Sauce: 2 charred habanero or serrano chiles, 1 garlic clove, 3 tbsp soy sauce, 2 tbsp Worcestershire sauce (salsa inglesa), 1 tbsp Maggi seasoning, and a pinch of salt.
To Serve: 1 cucumber (sliced in half-moons), 1/2 red onion (thinly sliced), 1 avocado (cubed), and crisp corn tostadas.
Easy Steps:
Cure the Shrimp: Place the butterflied shrimp in a shallow bowl, pour fresh lime juice over them, and chill in the fridge for 10–15 minutes while you make the sauce.
Blend the Sauce: Blend the charred chiles, garlic, soy sauce, Worcestershire, Maggi seasoning, and a splash of lime juice from the shrimp bowl until smooth.
Assemble: Arrange the cucumber and red onion slices over the shrimp, then pour the dark sauce all over.
Top & Serve: Garnish with fresh avocado cubes and serve immediately with crispy tostadas and an ice-cold drink! 🥑🌮✨
