🇧🇪 Brasserie Minne : Ardenne Triple Houblonée. With Simcoe, Chinook and Waï-ti hops. Tripel 9% ABV.

Here’s a pretty nice hop-forward twist on this tripel. It keeps that smooth, malty, yeast-forward, and spicy base typical of a tripel, but the extra hopping adds a lovely fruity edge and a touch of light bitterness. It makes the beer surprisingly refreshing for a 9% ABV.

🇧🇪 Brasserie Huyghe : Delirium Black Barrel Aged 2019. Belgian Strong Dark Ale 11,5% ABV. It's a mix of Delirium Nocturnum & Delirium Christmas, which are aged for 9 months in Oak Buffalo Trace Bourbon Barrels.

Here's a young beer I used to like, but I found it a bit too boozy on the bourbon side. Now, after almost 7 years in my wine fridge, everything has balanced out nicely.

Great mouthfeel, smooth, malty, with notes of caramel, almonds, woody vanilla, spices, and bourbon. It was a real pleasure sharing it with the family.

🇧🇪 Bières De Chimay ;Chimay Grande Réserve Vieillie en Barriques Whisky 2022. Belgian Strong Dark Ale 10,5 % ABV.

Here is a version of Chimay where, when fresh, I found the finish a bit subdued, but now, with 4 years of bottle aging, it’s a whole different story.

Great body, creamy, malty, caramel, spicy, heavily oaked, smooth, with a superb whiskey finish. Truly excellent.

🇧🇪 Brouwerij 3 Fonteinen.

Since we were in the area, we took the opportunity to visit the 3 Fonteinen taproom. It was an excellent call. Great beer selection on the menu, a lovely venue, and top-notch recommendations.

I had this amazing Lambic Geel Perzik (batch no. 24, bottled on 31/01/2024):

"For this organic Perzik, we macerated yellow peaches from a small farm in the north of Spain. We macerated these for five months on one- and two-year-old lambik before blending. The final fruit intensity is 409 grams of peaches per litre of Perzik. The lambikken originate from three different barrels and eight different brews."

Plus a 2011 Lambic 🤩. Excellent.

🇧🇪 Bières De Chimay : Chimay Bleue 2022. Belgian Strong Dark Ale 9% ABV.

I think it's official: I prefer Chimay Blue with a bit of age over fresh.

An absolute treat—creamy texture, the yeast is slightly more subdued, and it's much smoother overall. Less sharp carbonation. Notes of Madeira, dried fruit, spices, and far less bite. It's truly made for aging.

🇧🇪 Oud Beersel : Oude Geuze Barrel Selection Oude Pi**en 2020. 6,5% ABV.

Description : We have blended the finest Lambics of on average 20 months old matured on these ‘old pipes’ of between 60 and 120 years old, to create an Oude Geuze with the characteristics of these old barrels.

Nice Oude Geuze with a top wood touch, acidity is well balanced, citrusy, Tart, a bit funky. It's so easy to drink.

🇧🇪 Sint-Sixtusadbij Van Westvleteren : Westvleteren 12 (2019) . Belgian Quadrupel 10,2 % ABV.

Sometimes you just want to treat yourself in the evening. Here’s a little 2019 Westvleteren 12.

Still drinking wonderfully. Decent head retention, creamy, malty, smooth, notes of caramel, dried fruit, and a touch of liquorice. A proper little dessert in a glass.

🇧🇪 Brouwerij Het Anker : Gouden Carolus Cuvée Van De Keyser 2016 (Imperial Dark). Belgian Strong Dark Ale 11% ABV.

Pulled this superb bottle out of my wine fridge last week. It was a wonderful experience.

Very creamy and thick, with a touch of licorice, dried fruits like raisins, caramel, and toffee. Very round with a warming touch of alcohol on the finish. Best sipped slowly. A true pleasure.

🇧🇪 Brouwerij 3 Fonteinen : Zenne Y Frontera blend N°55 23/24. Lambic 7,7% ABV.

Description :For this ‘classic’ Zenne y Frontera, we blended all of our Josefa Perez barrels. This tiny bodega in the heart of Jerez de la Frontera inspired a lot of the other independent and family owned bodegas through their high quality and steadfast vision. This blend consists of lambik aged on four Oloroso barrels and two Amontillado barrels. We matured three-and-a-half-year - and older - lambik for another eleven months on these sherry barrels. Consequently, the weighted average age of this blend is over 50 months.

The complexity was truly impressive and difficult to put into words. I gave it some time to open up so all the flavors could harmonize. Balanced acidity, distinct citrus and vinous grape notes, strong barrel/oak character, and a nice dry sherry finish. Still a lot of training ahead to do justice to such intricate work!.
