This shop, Tsukiji, from serves only seafood based broths.

Very heavy on the fishy, salty umami… 5 different ramens on the card. This one is the classic… shoyu with sardines based broth, a piece of chashu, homemade noodles and I opted in for an egg ofc..

While the ALL-IN on seafood is not really my style, the broth delivered with a lasting impression.

Noodles are really good here!

Toppings was okay. The eggs were a little overcooked and the meat not so tender. It has overall become a little worse quality at Kodawari over the years we have been coming here, so I hope they will soon return to the generous and amazing quality that once was. 😕

Waiting time at the table was ridiculous. From seating to food on the table was around 30 mins (in a place where they could not cram 2 more people in at any table 😂😅😬)

Practice makes perfect, and the dish becomes increasingly more balanced 🙏🏻

This is a shoyu ramen based on pure chicken stock and a pure chiyu chicken oil. Very thick meaty slabs of chashu, a 48 hour marinated egg and a roasted tomato for sweetness and extra umami! 🍜

Summer in a bowl 😍 Stracciatella (mixed with salt, pepper, paprika and a bit of dried chili), fresh Danish strawberries, sweet peaches, basil and nice, just ripe tomatoes!!

We topped it with a few drops of balsamic vinegar dressing on each bite - freakin’ amazing!

Homemade shoyu ramen 🍜 with my scallion/chicken aromatic oil, thick chicken broth cooked 3.5 hours in the pressure cooker - and a new way of making chashu that I tested!

Worked out great! Super deep chicken flavour, sweet chashu and salty, umami tare 😍
