I’ve not even finished the herb garden and it’s already coming into its own. I’m laid up with an injured foot so there’s very little I can do at the moment but I have made our first batch of chilli oil!

Ever misjudge a recipe? Last night I wanted to trial an apple crumble cake recipe. This was supposed to make one 8 inch cake. What resulted was enough batter to make one 12 inch cake and one 6 inch cake. That’s a very large difference !!! I

We were craving a bit of junk food today and so I’ve developed this “sham lamb” vegan gyros. It tastes just like the real thing and was incredibly satisfying!

HERB GARDEN is coming along nicely. The plants are purchased; I have oregano, basil, rosemary, spearmint, thyme, Thai basil and chillies. I wasn’t able to get a parsley plant yet so that’s still to come! They are vaguely in position but I need to repot them first. They been like this for 3 days now and the water wells are doing their job nicely in this heat!

HERB GARDEN va muy bien. Las plantas están compradas; tengo orégano, albahaca, romero, menta, tomillo, albahaca tailandesa y chiles. Todavía no he podido conseguir una planta de perejil, ¡así que eso aún está por venir! Están vagamente en posición, pero primero tengo que replantarlos. ¡Han estado así durante 3 días y los pozos de agua están haciendo su trabajo muy bien con este calor!

The weather has been incredibly warm and I’m having to do this in between work but I have finished the next stage of PROJECT HERB GARDEN. I think this is the most difficult part which wasn’t particularly difficult at all. Next step is adding soil and planting it out!

Project herb garden begins!! We have a little terrace in our flat which is lovely, however the border between us and our neighbours terrace leaves a lot to be desired! Since we moved in I’ve wanted to find a way to add some greenery out there but I’ve never been exactly sure how to go about it.
The terrace gets full sun in the morning up until about 1pm and then it’s quite shady. Obviously the sun and heat in Spain can be intense so choice of plants will be very important. See we both cook a lot and there are many herbs native to Spain that love the sun, it made sense to go along the kitchen garden line and thus “PROJECT HERB GARDEN” is born.
We have limited space so I’m going vertical with this.
Like many people in Spain we currently purchase our drinking water in PET bottles which we are not big fans of (and we are working on ways to change this). As of today we had 8 empty 5 litre bottles ready for recycling so it made sense to try to repurpose these.
I have cut them in half which has given me 16 receptacles to play with and over the next couple of weeks I’m going to try to make this work! I am no gardener so this will be a learning curb for me! Stay tuned for more!

¡¡Comienza el proyecto de jardín de hierbas!! Tenemos una pequeña terraza en nuestro piso que es encantadora, sin embargo, ¡la frontera entre nosotros y la terraza de nuestros vecinos deja mucho que desear! Desde que nos mudamos, he querido encontrar una manera de agregar algo de vegetación allí, pero nunca he estado exactamente seguro de cómo hacerlo.

La terraza recibe pleno sol por la mañana hasta aproximadamente la 1 p. m. y luego está bastante sombreada. Obviamente, el sol y el calor en España pueden ser intensos, por lo que la elección de las plantas será muy importante. Mira, ambos cocinamos mucho y hay muchas hierbas nativas de España que aman el sol, tenía sentido ir a lo largo de la línea del huerto y así nace el "PROJECT HERB GARDEN".

Tenemos espacio limitado, así que voy a ir vertical con esto.

Como muchas personas en España, actualmente compramos nuestra agua potable en botellas de PET de las que no somos grandes fans (y estamos trabajando en formas de cambiar esto). A partir de hoy teníamos 8 botellas vacías de 5 litros listas para reciclar, por lo que tenía sentido tratar de reutilizarlas.

¡Los he cortado por la mitad, lo que me ha dado 16 receptáculos para jugar y durante las próximas dos semanas voy a intentar que esto funcione! ¡No soy jardinero, así que esto será un bordillo de aprendizaje para mí! Estén atentos para más!

Playing around with some plant based “enriched” dough recipes I’ve finally landed on a great chocolate babka recipe and an insanely tasty cinnamon roll recipe! There shall be no weight loss this year!!!

I recently made myself a birthday cake, 100% vegan moist and delicious chocolate cake. The “buttercream” was made partially using coconut oil which, without me realising, stabilised it enough to withstand being out of the fridge for an hour in our current temperatures! This is a discovery I will be using from now on!

Hace poco me hice un pastel de cumpleaños, un pastel de chocolate 100% vegano, húmedo y delicioso. ¡La "crema de mantequilla" se hizo parcialmente con aceite de coco que, sin que me diera cuenta, la estabilizó lo suficiente como para soportar estar fuera de la nevera durante una hora a nuestras temperaturas actuales! ¡Este es un descubrimiento que usaré a partir de ahora!

I have used this cake recipe a million times for chocolate cake but never for chocolate orange so a test run was definitely in order. If I am able to wait for them to cool, I’m looking forward to trying them!
This is by far my best selling vegan chocolate cake and now chocolate orange cake!

After a weekend of overeating and indulging we needed something lighter and healthier today. Though the only thing Spanish about lunch today is the time we’ll be eating and the use of guindilla chillies, this Asian slaw is going to hit the spot.
Many Asian ingredients are difficult find here in a Alcoy but I have been able to easily get soy sauce and rice vinegar, and found the vegan “fish sauce” online. Together with fresh veg, crispy fried noodles and chopped roasted peanuts, the dressing is sweet, hot and sour as it should be!
Después de un fin de semana de comer en exceso y complacernos, hoy necesitábamos algo más ligero y saludable. Aunque lo único español del almuerzo de hoy es la hora a la que comeremos y el uso de chiles de guindilla, esta ensalada asiática va a dar en el clavo. Muchos ingredientes asiáticos son difíciles de encontrar aquí en un Alcoy, pero he podido conseguir fácilmente salsa de soja y vinagre de arroz, pero encontré la “salsa de pescado” vegana en línea. Junto con verduras frescas, fideos fritos crujientes y cacahuetes tostados picados, ¡el aderezo es dulce, picante y agrio como debería ser!
