Big news shaking the Spanish sparkling wine scene 🥂

Juvé & Camps — one of the historic names in Cava — has officially left the DO Cava and joined Corpinnat, becoming its largest member.

This isn’t just a producer switching categories. It’s a statement.

For years, a growing number of top wineries have been moving away from Cava in search of stricter standards, stronger identity, and a clearer connection to terroir. Corpinnat represents exactly that: organic vineyards, hand-harvesting, long aging, and full production on-site.

So what does this mean?

190 million bottles of Cava were sold worldwide in 2025 🥂

Despite an overall decline of nearly 13% compared to 2024, DO Cava reports that the drop was driven by supply shortages caused by drought — not a fall in demand.

At the same time, premium Cava continues to rise. The category of Cavas de Guarda Superior (Reserva, Gran Reserva, and Cava de Paraje Calificado) grew by +1.41% overall. Notably:
✨ Gran Reserva increased by +6%
✨ Cava de Paraje Calificado (+36 months aging) surged by +82%

According to Xavier Pagès, these results confirm that the strategy of premiumization is paying off.

Sara Pérez is a Spanish winemaker working primarily in Priorat and Montsant. She is the daughter of José Luis Pérez, founder of the Priorat estate Mas Martinet, and later developed several projects of her own, including Venus La Universal together with René Barbier Jr.

Her wines often focus on Garnacha and Cariñena, with attention to vineyard expression and careful farming. Projects such as Mas Martinet and Venus La Universal are frequently mentioned in international wine publications as part of the generation that shaped the contemporary identity of Priorat.

Wine critics regularly give high scores to wines from her projects. Several vintages from Mas Martinet and Venus La Universal have received ratings in the mid-90s from publications such as The Wine Advocate and Decanter. Critics often highlight balance, Mediterranean character and the clear expression of site.

🌿 Winter Vineyard: The Quiet Season That Builds the Future

When we picture vineyards, we imagine sunlit rows, green canopies, and heavy clusters. But the real magic begins when everything seems still.

By October, the vines enter i dormancy — not a “dead season,” but the most strategic pause of the year.

What happens to the vine in winter?
After the leaves fall, the vine slows its metabolism and stores sugars and starch to survive the cold. It “sleeps,” but wisely — holding enough energy in its roots and shoots to burst into life in spring.
Winter’s biggest challenge:
It’s not the cold itself, but temperature swings. A stable –20°C with snow? The vine can handle it. Sudden thaws followed by sharp frost? That’s when tissues are at risk.
That’s why growers bend and cover the vines with soil, straw, or geotextile — a simple but vital protection.

Nature’s built-in antifreeze:
Lignified shoots and roots accumulate natural cryoprotectants — sugars that work like antifreeze, preventing ice from rupturing cells. Winter survival is pure biochemistry.

After the Harvest. The Vineyard’s Quiet Season Begins

When the last cluster leaves the vine, it feels like the vineyard exhales and falls silent.
But beneath the calm, life continues — the vine simply changes its rhythm. 🍂

After harvest, the leaves still work hard, turning sunlight into energy not for the grapes anymore, but for the vine itself. Starches and sugars accumulate inside — nature’s own reserve for the long winter ahead.

Some berries stay behind and slowly shrivel. That’s how late-harvest treasures are born — Sauternes, Tokaji, or ice wines — each depending on the delicate balance of humidity, noble rot, or an early frost.

Meanwhile, the roots keep drawing nutrients from the soil until temperatures drop below +8°C. That’s why vintners often fertilize the vineyard now — the liana stores this goodness for spring renewal.

Pruning, soil care, quiet observation — this is the true heartbeat of autumn in the vineyard. Because the sweetness of next year’s grapes begins today, in the quiet strength the vine gathers before its winter sleep. 🌾
