“Sin Maguey no hay Mezcal”

Day 3- We visited The University of Chapingo to take an in-depth look at their project based upon the rescue and production of mezcalero agaves in danger of extinction. We learned from the biologist Efrain Paredes and his staff, about the sexual and asexual reproduction of the agave plant as well as the time and care surrounding: 1. plant selection, 2. collection and preparation of material for the laboratory, 3. Micro propagation in the lab. 4. Acclimatisation in green houses, and 5. Maturation in the shade. This entire process can take between 6 months to over a year just to get the plants ready for the nursery. Once they are fully established and their viability and sugar levels have been established they can be distributed to local agave farmers for maturation in the fields.
We spent the rest of our day transplanting the offspring of genetically viable agave sprouts to the soil. What an amazing opportunity to be a part of this process!

🌵 Embarking on a mesmerizing journey into the heart of Oaxaca, diving deep into the world of mezcal! From learning about the intricate process to savoring the divine elixirs, every step was a revelation. Huge thanks to Eduardo and the incredible teams at Alipus / Danzantes for their warm hospitality and for inviting us to discover the magic of mezcal! 🥃✨

Day 1- Staff from La Valentona Mezcaleria (Granada, Spain) got a chance to visit Los Danzantes mezcal distillery (Oaxaca, Mexico). We toured their facilities and met their staff to learn about the processes that Los Danzantes uses for bringing the agave plant to spirit form. We also learned about Project Alipus and how they have been working with small, family-based producers for the past 25 years to bring exciting new products and flavours to the international mezcal market. La Valentona has been very excited to see the amazing work that Los Danzantes has been doing in the areas of small farm certification, fermentation, distillation as well as environmental stewardship!
