How did I go from not cooking a single fried egg to cooking traditional Mediterranean food as delicious as my grandma's? 🙂

I’ve been asked this question many times… "But Aida, how did you learn to cook like this?"
And the truth is, the answer is simple and very special for me: thanks to my dear grandma, Juanita.

From a very young age, I remember my grandma always in the kitchen preparing delicious meals for the whole family, which was quite large, I must say. I was fascinated by her ability to fill the whole house with magical smells, the way she chopped vegetables, the love she put into everything she did, and the unique flavors she always achieved.

My grandma had many magical powers, but of all the powers she had, the greatest was her cuisine. If you ask anyone who had tasted one of her dishes, they will confirm it, no doubts.
Of course, my grandma noticed my enthusiasm for cooking, she didn't miss it and immediately started teaching me.

It was as if I had discovered a new and exciting world from the moment my training began. She had infinite patience with me, and even if it took me thirty minutes to peel a single potato, she would be by my side until I succeeded, always supporting me and reminding me how well I had done it.

I should explain that my grandma Juanita spent her adult life in Spain, but she was born near Morocco, so she always cooked old-fashioned and totally traditional Mediterranean recipes, whether Spanish or Moroccan.

She always taught me her best secrets and I was like a sponge, absorbing all her knowledge. And so, little by little and without realizing it, I began my journey into the world of cooking and she instilled in me a passion that I still have today.

We followed her method, starting by cooking simple dishes but gradually we moved on to more elaborate dishes. Over time, I developed new culinary skills, became more familiar with ingredients, learned to cook different types of meats and vegetables, and developed a wide repertoire of dishes that I still enjoy preparing today.

Today, when I cook, I always think of my beloved grandmother and everything she taught me. For me, preparing a meal is much more than just an everyday act. It is a way to connect with my roots, to honor my grandmother, and to share my love and affection with the people I love the most.

It is thanks to her and to her method that I developed all my current skills and discovered my passion for cooking. And although she is no longer with us, I know that her culinary legacy will live on forever through me and all the meals I prepare with love and dedication.

Would you like to cook traditional Mediterranean dishes as tasty and delicious as those made by a grandma?

It is likely that this has already happened to you on more than one occasion.

Remember those times when you went to eat at your grandma's house and she made that dish that you liked so much that it drove you crazy, has that ever happened to you? If your answer is yes, maybe you also thought that you would pay to eat one of her dishes, could it?

When I started paying attention to my friends' and family's relationship with cooking, I realized that this happened to many of them very often, and I always asked them the same question: Don't you hate not being able to do it yourself?

And here the answers were often repeated: yes, of course it makes me angry, but I can't cook like that, no way... When I've cooked with her recipes, it's never the same... But you're crazy, with how complicated it is and how much time it takes, I would never cook the same... That's impossible...

Make no mistake, cooking as well as they do is not impossible, far from it. The only thing that makes the difference between the cooking of someone who cooks well and the cooking of a grandma is the knowledge they have acquired after all the hours they have invested over the years. It is not time, it is knowledge, and knowledge can be passed on and replicated, you just have to know it and know how to apply it.

If you feel you are not cut out for cooking, here’s what’s happening to you.

Growing up with the preconceived notion that we are not good at something can limit our lives in many ways, and cooking is a clear example.

I have met many people my age who don't like to cook or who feel that cooking is not for them. However, I have met very few who can give a solid argument for their answer to the question, "But why don't you like cooking? Why isn't it for you?

And right now you might be thinking, "Of course there are solid arguments, Aida. Really? Let's analyze them.

The most common answers I usually get are

- Because it takes a lot of time.
- Because it's too complicated.
- Because I'm not good at it.
- Because I'm happy to eat quickly, so I don't complicate things.
- Because it's much more convenient to order and have it delivered already prepared, cooking is a lot of work.

And I propose to you, let's analyze each of them to see what's behind them:

- Because it takes a lot of time - It is true that cooking is something that takes time, but not as much as you think.
Did you know that you can have a week's worth of meals ready in less than three hours? For the whole week. And homemade. 3 hours out of 168 hours in a week, does that really seem like a lot of time?

- Because it’s too complicated - And here I ask you a question that may seem really silly at first: How many ways to learn to cook have you known? Probably only one: copying, and yes, copying is complicated. But... Did you know that there are other ways to learn to cook in a few simple steps? A completely different way where you are the protagonist.

- Because I'm not good at it - Here I would like to ask you: the times you have tried to cook... have you felt overwhelmed while doing it? Did you feel lost? As I said, we grow up with ideas about ourselves that are completely biased by our past experiences. Tell me something, when you were cooking, did you have someone at your side to guide you? Have you ever tried to cook while being totally guided? Believe me, you can probably do much better than you think, you just need a little push to start believing in your abilities and face your own limitations.

- Because I'm happy to eat quickly, so I don't complicate things. - And tell me something, you're so used to eating them that the thought "this is bad for my body" hasn't crossed your mind for a long time, right? Because eating pre-cooked fast food, sure you know it's unhealthy, but at what point did you start to downplay it?

- Because it's much more convenient to order and have it delivered already cooked, cooking is a lot of work - have you ever stopped to calculate how much money you spend a year ordering junk food? I encourage you to do so, even for just one month, and it is very likely that the figure is far higher than what you are actually spending. Is it worth it to continue wasting not only your money but also your own health with food that does not nourish your body by not buying real food and not staining a few pans?

And after this little reflection... How limiting our own minds can be, don't you think?

Hello foodie! :)

Have you ever wondered why grandmas cook so well? I have, and after much reflection, the answer I found filled my heart with joy, and today I have decided to share it with you.

The truth is that any grandma have lived much more than you and I have. They have seen many things, they have loved, suffered, laughed, and cried much more than we have. Although we all make the mistake of not asking them about their past, all of this has made them very wise and full of knowledge that is sometimes unparalleled. However, there is one thing they are truly masters at: cooking.

Grandmas have spent hours and hours in the kitchen, developing their skills and secrets for cooking delicious food. But what has surprised and excited me the most is that their secrets are not really secrets at all, they are simply knowledge acquired through experience and practice, and the real secret is in passing on that knowledge.

Once you know the tricks and secrets of enhancing and combining flavors, the results are spectacular. When you know and apply his secrets, you can prepare recipes as delicious as his, and you will never eat bland food again!

This is why following recipes from youtube or instagram isn't working for you.

I can't tell you how many times people have contacted me to say that they don't understand why they can't replicate the recipes they see in videos on various platforms, such as Youtube or Instagram. They always assure me that they follow each and every step, that they measure the quantities, that they measure the time... and still nothing.

Well, since I have seen that this is a question that you usually ask, today I want to share with you 10 reasons, among the dozens of others that exist, that explain why this type of method usually does not work for you:

1. There is no direct interaction with the chef: Unlike a cooking class where the chef can interact directly with the students, in a YouTube video the chef does not have the opportunity to answer questions or provide personalized feedback. Therefore, learning may be limited.

2. No opportunity to practice: Learning to cook well often requires practice. If a person only follows video recipes, they may not have enough opportunity to practice and hone their skills.

3. Video quality is not ideal: The quality of the video can be an important factor in understanding the steps in a recipe. If the video is of poor quality, it may be difficult to follow the steps in the recipe correctly.

4. No real-time feedback: When a person is cooking in a class, they can get real-time feedback from the chef or other students. However, with a YouTube video, the feedback is not immediate, which can limit learning.

5. Lack of cooking experience: If a person has no previous cooking experience, following a video recipe can be overwhelming. Videos may move too quickly or contain technical terms that are difficult for someone new to cooking to understand.

6. Quality of ingredients: The quality of ingredients can affect the final result of a recipe. If a person does not know how to choose quality ingredients, the end result may be disappointing.

7. No opportunity to experiment: Cooking is a creative field where people can experiment and innovate. If a person only follows video recipes, he/she may miss the opportunity to experiment and innovate in the kitchen.

8. Lack of understanding of the basic principles of cooking: If a person only follows video recipes, he/she may not understand the basic principles of cooking, such as using different cooking techniques, combining flavors, and presenting dishes.

9. Not learning to cook intuitively: If a person only follows video recipes, he or she may not learn to cook intuitively. That is, they may not learn to improvise and create dishes from the ingredients available to them.

10. Not learning to adapt recipes to personal tastes: If a person only follows video recipes, he or she may not learn to adapt recipes to personal tastes. That is, they may not learn how to make adjustments to the recipe to better suit their taste preferences.

It is important to note that these are just a few possible reasons why a person following videotaped recipes on YouTube may not learn to cook well. It should be noted that everyone is different and may learn differently.

This is how a 25-year-old Canadian girl doesn't need to be in Spain to cook traditional Mediterranean dishes that are as tasty as her grandma's.

Sara is a clear example of what I wanted to share with you today. Let me explain:

I often meet people who think that cooking Mediterranean food outside of the countries that belong to the region is something complicated. First, because they think that the ingredients from this area are very difficult to find in their countries. Second, because they are very expensive ingredients because of their origin.

And Sara was one of those people. She was one of the people from the ski school that I was involved with in Canada that I connected with the most, we spent a lot of time together and we shared our interest in cooking. Sara thought it was impossible to cook anything Mediterranean when I met her, she thought it was impossible to get the ingredients there and that it would be expensive.

And now... let her be the one to show you how she makes tortilla de patatas!

The faster you get used to taste your dishes while cooking them, the sooner you will learn to master the traditional flavor.

Hello foodies! :)

Today I wanted to share with you a super simple tip that you already know, but you can't imagine how much it has helped me progress in my cooking and I see every day many people who still don't apply it in their daily lives.

Be honest, not with me, but with yourself and answer the following question: how many times have you cooked something and waited for it to be ready to try?

And here there are two possibilities, also very simple: you test your recipes as you cook them, and it's already a habit, or you practically never test them, and the result is a surprise.

If you are one of the people in the first group, my sincere congratulations, believe it or not, you have a great way to go and I'm sure you appreciate the importance of flavor. On the other hand, if you tend to live life on the edge and expect surprising results, here is my sincere advice: the more you taste your food as you cook it, the sooner you will learn to control and improve its flavor.

It is very common that we forget to taste our food while it is being cooked, but unconsciously we are waiting for the taste to be perfect and good... for this to happen you have to spend many hours in the kitchen.

So, the next time you are cooking, remember this simple tip and remember to taste your food several times during the cooking process so that you know for sure and in advance what to correct.

The formula is very simple, foodie, and it boils down to what my grandma used to repeat every time we cooked together: taste your taste! :)

Let me introduce myself :)

My name is Aida Collazos and I am a Spanish girl born in Madrid.

I have been cooking for as long as I can remember, and it all started in Juanita's kitchen, the most special place in my grandparents' house. My grandma's kitchen. She was, without a doubt, the best cook I have ever known, not only for the taste of her dishes, but also for the generosity and love that radiated from her cooking.

I remember with joy the excitement I felt when I arrived at her house, knowing in advance that she was the one cooking, because the whole doorway was impregnated with wonderful and totally unique smells.

Although I am an Environmental Engineer and an Industrial Organization Engineer, the truth is that my degrees give me a routine that doesn't allow me to be really happy. Engineering is very nice, it is very necessary, but after several years of working as an engineer I realized that it is not my vocation.

Thanks to her, I learned to cook in the traditional way, the old way, real food, recipes that have preserved their origins through generations and generations. I discovered a great love for cooking and this was one of my main motivations in creating this course since a few years ago I discovered that I have an even greater passion than cooking itself: sharing my knowledge with others.

I want to share with the world all that she has taught me over the years, because I want her love to continue to be present on the tables of many families.

Over here it's so popular that it has its own day on the calendar. It is celebrated on March 16th, in honor of Miss Carmen Ortego, a famous Spanish chef.

I'm just stopping by cause I want to ask you two simple questions:

Have you ever tried a Spanish tortilla de patatas? If your answer is no, then you don't know what you're missing - I highly recommend giving it a try as soon as you get the chance! 🙂

The tortilla de patatas, or Spanish omelette, is made of beaten egg curdled with oil in a frying pan to which chopped potatoes are added.

It is one of the most famous and emblematic dishes of Spanish cuisine, being a very popular product that can be found in almost any bar or restaurant in the country.

There are many variations on the basic recipe, both in the way the ingredients are cooked and in the way the egg is cooked. The most common addition is onion, which makes it even more popular than the basic recipe.
