Have you tried Romesco sauce yet? 🌶️

This is one of Spain’s oldest and most beloved sauces; born in Catalonia centuries ago, made by fishermen and farmers with whatever they had to hand. Roasted tomatoes, garlic, Ñora peppers, almonds, hazelnuts, and good olive oil.

Simple ingredients. Incredible depth of flavour.

It works with almost everything: grilled vegetables, meat, fish, even as a dip. And once you make it, you’ll wonder how you ever cooked without it.🍆🐟🍖

🌶️Ingredients:

- 750g ripe tomatoes
- 5 garlic cloves
- 2 Ñora peppers or dried red peppers
- 40g toasted & peeled almonds
- 40g toasted & peeled hazelnuts
- 100g bread
- 250ml extra virgin olive oil
- 50ml vinegar
- 1 tbsp sweet paprika
- 1 dried or fresh chilli pepper

These dishes are not just food… they reflect everything behind them. 🧑🏼‍🍳

The past month has been intense: long hours of work, testing, ideas coming and going, and the excitement of being part of creating the new menu at the restaurant where I work. And on top of that, this Easter period has also been demanding—one of those times that really tests you, but reminds you why you’re passionate about what you do. 💪

In the end, everything starts to fall into place. Step by step, the project keeps moving forward—and so do we.

In the years after the Spanish Civil War, when hunger was part of everyday life, bread became the hero of the recipes we now call “Cocina de Aprovechamiento”. But what they really are is recipes of ingenuity and survival.
Migas, made with stale bread and whatever you had on hand. Sopa de ajo, warm and comforting, made with little more than water, garlic, and a crust. Torrijas, turning yesterday’s bread into the sweet treat of Holy Week.
Simple in ingredients, rich in everything else.
Today, looking at what’s happening around the world, you realize that ingenuity was never just a thing of the past. Hunger is still very real for millions of people, and these recipes remind us that cooking with little is also an act of dignity.
